Use the grinder procedure in your model’s manual: some machines require adjustment while grinding, and grind-number directions differ by brand. After a grinder change, make two or three drinks before judging the result.
What to adjust—and what the cup can tell you
Dialing in means making small changes to improve the balance of the espresso your machine produces. On a bean-to-cup machine, the grinder is only one control: aroma or strength settings and programmed drink volume can also affect how strong the coffee tastes.
| What you notice | Possible next step | How to interpret it |
|---|---|---|
| Fast, watery flow and little or very light crema | Try one step finer if your machine’s guidance supports that change. | De’Longhi gives this advice for the Magnifica Evo Next; it is not a universal recipe. De’Longhi’s Magnifica Evo Next grinder-settings FAQ |
| Very slow flow or dripping | Try one step coarser if your model’s instructions allow it. | This is also model-specific guidance from De’Longhi for the Magnifica Evo Next. De’Longhi’s Magnifica Evo Next grinder-settings FAQ |
| Weak-tasting coffee without an obvious flow problem | Check the aroma or strength setting and programmed cup quantity, if available. | Philips distinguishes these controls from the grinder and lists them among factors that can affect strength. Philips’ setup guide and Philips’ watery-coffee troubleshooting |
Flow, crema and taste are clues, not proof that an espresso is objectively ideal. Use them alongside your own preference and the instructions for your specific machine; the cited manufacturer guidance does not establish a universal dose, extraction time, beverage mass or temperature for bean-to-cup espresso.
A step-by-step dialing-in workflow
- Choose one coffee and start from the default espresso recipe. Prepare the machine as its manual directs, and keep the beans the same while you tune the settings. Do not assume a higher or lower grinder number means the same thing across brands.
- Taste the espresso and observe how it flows. If it runs fast and watery with little crema, a finer grind may be worth trying. If it runs very slowly or drips, a coarser grind may help. These cues come from De’Longhi’s Magnifica Evo Next guidance, so verify that your own model uses the same approach. Read the model-specific guidance.
- Make one small grinder change using the manual’s procedure. Philips says that, on the covered machines, the grinder setting can only be adjusted while grinding and advises moving no more than one notch at a time. Some models use a supplied key. De’Longhi likewise recommends one-click adjustments for the Magnifica Evo Next. Do not force a control or turn it contrary to your manual. Philips grinder-adjustment instructions · De’Longhi grinder-settings FAQ.
- Let the machine catch up before assessing the change. Brew two or three drinks before deciding whether the new grind setting helped. Philips recommends two to three drinks; De’Longhi says the new setting is fully effective after at least two espressos. Philips’ instructions · De’Longhi’s FAQ.
- Change a different control only after evaluating the grinder change. If the espresso still tastes weak, try the separate aroma or strength setting, or reduce the programmed drink volume if your machine supports it. Change one setting at a time so you can tell which adjustment affected the cup. Philips describes aroma strength and beverage quantity as separate controls. Philips’ setup guide.
- Retaste when you switch beans. Bean type, roast level and blend can call for a different grinder setting, according to De’Longhi. Treat a new bag as a reason to reassess, not as a guarantee that a particular roast will fix every extraction issue. De’Longhi’s grinder-settings FAQ.
If the grinder control will not move
First check whether your model permits adjustment only while the beans are being ground. Philips gives that instruction for the machines covered by its support page, and some models require a supplied key. Follow the exact procedure in your manual; do not force the dial or borrow a procedure from another brand. Philips’ grinder-adjustment instructions.
