Choose a Soulslike by the actions you want to use and the ways you want to manage difficulty—not by a single “easy-to-hard” ranking. Check accessibility and difficulty as separate questions
A difficulty label cannot tell you whether a game accommodates the particular control, camera, or visual settings you need. Microsoft’s Xbox Accessibility Guideline 108 frames difficulty as a collection of variables: you might want combat adjusted without changing puzzles or other mechanics.
