To change playback speed, open an episode’s Now Playing screen in Apple Podcasts and tap the speed control. To change how far the skip buttons jump, open Settings > Apps > Podcasts and adjust Back and Forward separately.
Change playback speed for an episode

Open Apple Podcasts and start the episode you want to hear.

Tap the MiniPlayer at the bottom of the screen to open the Now Playing view.

Tap the Playback Speed button, which may show the current rate, then choose a speed from the menu. Apple also documents swiping the speed control left or right; in some player views, touch and hold the control, then slide to select a speed. Set a different speed for one show
If you want one followed show to play at a different rate from other episodes, set a show-specific preference:

In Podcasts, go to Library > Shows and select a followed show.

Tap More > Settings.

Scroll to Speed & Audio Adjustments, choose Custom for This Show, and select a speed. This section also lets you turn Enhance Dialogue on or off. See Apple’s guide to podcast settings.
Change the skip-back and skip-forward intervals
Apple documents default skips of 15 seconds back and 30 seconds forward. You can change the two controls independently in iPhone Settings:

Open the Settings app.

Tap Apps > Podcasts.

Tap Back to change the rewind interval, or Forward to change the fast-forward interval, then choose an option from that control’s menu. Apple’s current iPhone guide gives this path and the defaults: Adjust podcast settings on iPhone.
The available interval choices can depend on the current iOS interface; Apple’s guide confirms the separate Back and Forward menus but does not list every choice. Use the options shown on your iPhone rather than relying on a fixed list from an older iOS version.

Which control should you change?

Playback Speed changes how quickly the episode plays; use it from Now Playing.

Back and Forward change the distances moved by the skip controls; use the Podcasts settings in the Settings app.

A show-specific speed preference affects that followed show, rather than serving as the general skip-duration setting.
Using Podcasts with CarPlay
CarPlay offers ways to control playback through the car’s controls, the Now Playing screen, or the CarPlay Dashboard. Those controls are for playback; use the iPhone’s Settings > Apps > Podcasts menus to change skip durations. See Apple’s CarPlay playback guidance.
