The American Cheese Society (ACS) recommends no more than five cheeses and advises keeping strongly pungent selections apart from delicate ones. Hardness is a useful starting point, but it does not tell you everything about a cheese’s flavor, aroma, or suitability for every guest.
What makes a cheese hard or soft?
Hard and soft are broad categories related to moisture and fat in a cheese’s dry matter, not a strict two-part system. U.S. standards also leave overlap between hard and semi-soft categories. Some cheeses sit between the labels, and the texture can vary within a category.
For example, the ACS describes soft-ripened cheeses such as Brie and Camembert as having a soft or semi-soft interior. Bacteria-ripened cheeses can range from semi-soft to hard grating textures. FoodSafety.gov’s emergency chart groups Cheddar, Colby, Swiss, Parmesan, provolone, and Romano as hard cheeses; it lists Brie, Camembert, cottage cheese, cream cheese, ricotta, and mozzarella among soft cheeses. Those are the groupings used in that chart, not a complete definition of every cheese.
On a board, think of texture as a contrast: pair a firm cheese that slices or crumbles with a soft-ripened or spreadable one. Neither category guarantees a particular flavor intensity or quality.

How to choose cheeses for a balanced board
Vary the experience, not a hard-to-soft ratio
Choose a limited selection with differences in texture, shape, and flavor. The ACS suggests no more than five cheeses, but there is no source-established ideal ratio of hard to soft. A board with one of each can work; so can a selection weighted toward one texture, provided the cheeses offer variety.
Keep pungent cheeses apart from delicate ones
A strongly aromatic or pungent cheese can dominate a mild, delicate one. Give these cheeses space on the board rather than placing them side by side. Texture alone does not predict which cheese will have the stronger flavor or aroma.

Use familiar examples as a starting point
Cheddar or Parmesan can provide a hard option, while Brie offers a soft-ripened contrast. These are examples, not required choices; select cheeses that suit your guests and the range of flavors you want to serve.
How to present and serve the selection
Leave enough room for guests to cut and serve each cheese. A wooden board, marble slab, straw mat, or flat wicker basket can work as a surface; no particular material is required. The ACS recommends an individual knife for each cheese, which helps keep the different cheeses separate.

Serve bread or plain crackers separately, and treat accompaniments as optional choices rather than fixed pairings based on hardness. The ACS lists apples, pears, grapes, strawberries, figs, melon, walnuts, Marcona almonds, honey, wine jellies, and mostarda as possibilities.
How to store leftover cheese
The ACS recommends wrapping opened cheese in fresh wax paper, parchment, or specialty cheese paper, then storing it at 35–45°F in a high-humidity spot—preferably the refrigerator’s bottom fruit or vegetable bin. Separate cheeses when possible, especially pungent blues and washed-rind cheeses from milder varieties.

For soft-ripened cheeses, the ACS gives 3–5 days at peak flavor depending on storage temperature. That is category guidance, not a guarantee for a particular cheese; follow the product’s own handling instructions where available.

Hardness alone does not establish that a cheese is safe for every person or circumstance. For people at increased risk of food poisoning, FoodSafety.gov lists pasteurized hard cheeses such as Asiago, Cheddar, Parmesan, and Swiss/Gruyere/Emmental among safer choices. It identifies cheese made from raw, unpasteurized milk as a risk, and notes additional concerns for some unheated queso-fresco-type cheeses.

FoodSafety.gov’s power-outage chart, last reviewed August 8, 2024, says to discard the listed soft cheeses if they have been above 40°F (4°C) for more than two hours, while the listed hard cheeses are marked “Keep.” This instruction applies to the chart’s power-outage scenario and named categories; it is not a general rule for ordinary serving time or every kind of cheese.
