Does fresh-ground nut butter need refrigeration? If it is natural and has no added sugars or oils, the Academy of Nutrition and Dietetics recommends refrigerating it. For any particular jar, follow its label: products and directions vary, and there is no single established shelf life for every freshly ground nut butter.
How should you store fresh-ground nut butter?
Check the jar’s storage directions first. The U.S. Food and Drug Administration (FDA) advises consumers to follow storage instructions on food labels. If the label says “refrigerate after opening,” refrigerate that product after opening.

Recipes, processing, packaging and manufacturer directions differ, so the general guidance does not override the instructions for your jar.
How long does fresh-ground peanut butter last?
A universal shelf-life for all fresh-ground nut butters is not established. The USDA Food Safety and Inspection Service (FSIS) lists peanut butter generally as pantry-stable, with six to nine months unopened and two to three months opened. Those figures are general peanut-butter guidance, not a tested guarantee for every fresh-ground batch, nut type or mill. Use the package date and storage directions, or ask the maker about a product-specific duration.

Why does natural nut butter separate?
Oil separation can be normal in non-stabilized nut butter; the oil may need to be mixed back in. A USDA specification distinguishes stabilized from non-stabilized nut butters and says stabilized products should not show noticeable oil separation. Separation by itself does not prove that a jar is spoiled or unsafe.
What food-safety rules apply?
FDA guidance says to keep the refrigerator at or below 40°F (4°C). Its room-temperature limit is for foods that require refrigeration: refrigerate them within two hours, or within one hour when the air temperature is above 90°F (32°C). FDA does not classify every fresh-ground nut butter as requiring refrigeration, so do not treat those time limits as a product-specific nut-butter shelf life.

FDA’s advice to “Refrigerate or freeze perishables right away” concerns perishables; it is not a direction to refrigerate every jar of nut butter.

Discard nut butter if you see mold. But smell and appearance are not reliable safety tests: FDA cautions that food can make people sick even when it looks, smells or tastes normal. Do not taste a product to decide whether it is safe, and follow the label’s storage instructions.
