Commercial gas equipment may need an additional exhaust allowance for combustion products and combustion air, but there is no universal gas-versus-electric airflow multiplier. The right ventilation design depends on the cooking equipment, emissions, hood configuration, cooking practices, and locally adopted requirements.
Why fuel alone does not determine ventilation
A commercial kitchen exhaust system is designed to capture and remove cooking effluent, including heat, smoke, grease, and vapor. ASHRAE notes that gas-fired cooking equipment may require an additional allowance for exhausting combustion products and supplying combustion air. That is a design consideration—not a standard cfm increase that applies to every gas stove.
In practice, two cooking lines using different fuels may have different ventilation needs, but the fuel label by itself cannot establish the required hood or airflow. A qualified designer must evaluate the actual appliances and how they are used.
What determines the exhaust and hood design?
Appliance and duty
ASHRAE groups commercial cooking appliances into light, medium, heavy, and extra-heavy duty categories. Its examples list gas open-burner ranges as heavy duty and electric discrete-element ranges as medium duty. These examples distinguish those particular appliance types; they do not mean every gas appliance has a higher duty category than every electric appliance. Griddles and fryers, for example, may use either fuel and are categorized according to the equipment and cooking duty.

Cooking process and emissions
The food being cooked, temperature, grease production, smoke, and operating practices affect what reaches the hood and how effectively it must be captured. Grease and smoke—not fuel alone—are central to deciding whether grease-handling capture is needed.

Hood configuration and placement
Hood style, overhang, side panels, and distance from the cooking surface affect exhaust requirements and capture performance. A hood that is poorly matched to the appliances or their placement may not capture effluent reliably, even if its nominal airflow seems substantial.
Combustion, replacement air, and the building
Gas combustion adds products that may need to be exhausted, and the appliance may require combustion air. The exhaust system also interacts with replacement air, building pressurization, HVAC, and fire safety. These factors should be considered together rather than treating hood airflow as an isolated number.

Does a gas stove require a Type I hood?
Not simply because it uses gas. ASHRAE describes Type I hoods as designed to collect grease particulate, condensable vapor, and smoke; they are required over equipment that produces smoke or grease-laden vapor. Examples include ranges, fryers, griddles, and broilers, with both gas and electric equipment represented.
Type II hoods are not designed for grease removal. Some electrically heated equipment—such as microwaves, toasters, steam tables, and warming equipment—may not typically require a hood, but those examples should not be generalized to all electric cooking. Even electrically heated equipment that does not need a hood can add heat and moisture loads that belong in the HVAC design.

Which codes and standards apply?
Commercial kitchen ventilation requirements depend on the codes adopted for the location, local amendments, and the authority having jurisdiction (AHJ). ASHRAE advises identifying the governing requirements and consulting the AHJ. NFPA lists NFPA 96, 2024 edition, as the standard for ventilation control and fire protection of commercial cooking operations.
Requirements can differ by jurisdiction and adopted edition. For example, the 2021 International Mechanical Code with Rhode Island amendments says commercial kitchen exhaust hood systems shall operate during cooking. That is a jurisdiction-specific adopted-code example, not a rule that can be applied everywhere. Confirm the locally adopted code and amendments with the AHJ before specifying a system.

How to compare a commercial gas range with an electric one
- Identify the exact appliances. Record each appliance type, fuel, and relevant duty classification rather than comparing fuel labels alone.
- Describe the cooking. Include the food, temperatures, expected grease and smoke, and normal operating practices.
- Evaluate capture needs. Determine the appropriate hood type and configuration, including placement, overhang, and side panels.
- Account for combustion and the building. For gas equipment, address combustion products and combustion air alongside exhaust, replacement air, HVAC, pressurization, and fire-safety considerations.
- Verify local requirements. Have a qualified commercial kitchen ventilation designer check the applicable codes and coordinate with the AHJ.
Why household hood advice is not a commercial sizing rule
The EPA’s advice to use a correctly sized range hood vented outdoors addresses indoor air in homes, including combustion products from household gas ranges. It does not provide a method for sizing commercial kitchen exhaust. Do not use residential hood guidance or airflow figures to specify a commercial system.
