A food-delivery price is not a single universal number. To compare orders accurately, record the menu price, fulfillment method, each fee, tax, discounts, tip, and whether the displayed total is estimated or final—along with the platform, merchant location, basket, jurisdiction, and observation time.
Why one delivery-price number can mislead
The menu subtotal and the checkout total are different layers. An item can have one listed price for delivery and another for pickup or in-store reference, while fees, tax, discounts, and tip change what the customer ultimately pays.
DoorDash documents a delivery price and a separate base_price used for Marketplace pickup and certain DoorDash first-party channels. DoorDash also says it does not require restaurants to match in-store prices on delivery orders; it encourages prices close to in-store levels, but merchants retain discretion. Fees are also distinct from menu prices and from one another. A label alone does not establish where a fee goes or how it is calculated. For example, DoorDash’s July 23, 2026 fee announcement describes a fixed delivery fee that varies by merchant and a service fee that varies with factors including distance and order size. It says a long-distance fee remains for a small number of deliveries, typically those over 10 miles. These are dated company policy statements, not permanent rules for every order or market. What to capture in a price record
Use one observation record for each platform, merchant and location, basket, fulfillment mode, and observation time. The following is a practical data model, not a platform-mandated schema.

Do not treat every field as available on every platform or order. Record an unavailable component as unknown or not observed, not as zero. Zero means the amount was observed to be zero; unknown means it was not established. Keep a screenshot, receipt, or other permitted capture with the record when appropriate, and do not infer a fee’s economic destination from its label.

Keep estimates separate from final amounts
Uber Eats says some orders show an estimated subtotal and tax that can differ from the final amounts because of in-store pricing, item availability, and substitutions. Its help page defines the estimated subtotal as excluding promotions, small-order, service, and delivery fees, as well as tip. Its estimated total includes those amounts. The final total is the merchant-confirmed amount and includes promotions, those fees, and tip. Uber Eats Help on estimated and final prices.
That distinction matters especially when a courier shops or pays in store: the item selection, substitutions, and confirmed prices can affect the final merchandise subtotal and tax. Uber Eats says fees, promotions, discounts, and tip are based on the estimate and do not change if the estimated subtotal or tax is updated. Do not silently substitute an estimated total for a final charge in a dataset or comparison.

How to compare delivery with pickup
- Match the merchant and location. Prices and fees can vary by restaurant location and jurisdiction.
- Match the basket. Use the same items and quantities; note unavailable items or substitutions rather than treating unlike baskets as equivalent.
- Match the observation window. Capture delivery and pickup prices close together and record the timestamp, since displayed prices and fee rules can change.
- Separate the components. Compare delivery-menu prices with the relevant pickup or in-store reference, then compare item subtotal, each fee, tax, discounts, tip, and total independently.
- State what is included. Identify whether a total is estimated or final, whether tip is included, and whether discounts or membership eligibility apply.
This method is a practical comparison framework, not a universal published standard. If the items, promotions, fulfillment terms, or included charges differ, state the mismatch instead of presenting the totals as directly equivalent.
Why fee rules need a date and location
Platform fee descriptions are time- and market-specific. In its July 23, 2026 announcement, DoorDash said its updated consumer fees would roll out across most of the United States over the coming months. The initial rollout excluded California, Chicago, Colorado, the District of Columbia, Massachusetts, Minnesota, New York City, Puerto Rico, and Seattle. DoorDash said every fee and tax would be shown again at checkout, and that actual fees vary by order.

The company reported that more than 70% of sampled recent orders in relevant markets would have had the same or lower fees under the announced model, with a $0.78 median saving per order. DoorDash cautioned that the sample was limited, outcomes vary, savings are not guaranteed, and fees may change. Treat those figures as the company’s account of a sample—not a forecast for a particular order or a market-wide result. DoorDash’s July 23, 2026 fee announcement.
Older platform-wide claims need the same care. DoorDash reported that its average consumer fee per order fell by more than 8% in 2022; that is the company’s own metric for that year, not an independent estimate of all delivery costs. DoorDash’s transparency post describing 2022 fees.

Use cost comparisons cautiously
A percentage such as “delivery costs X% more” is meaningful only if its scope is clear: what basket, location, date, platform, fulfillment alternative, and definition of cost were used? The FTC’s 2026 rulemaking notice summarizes outside studies and reports that found different comparisons, including nearly 80% higher delivery cost in one cited study and increases ranging from 25% to more than 90% in others. The notice also summarizes reports of meal prices on delivery platforms being more than 20% higher than restaurant prices. These are attributed findings from outside work, not FTC measurements or universal estimates. FTC 2026 rulemaking notice.
There is no single independent platform-wide figure in these sources that represents a typical markup across all orders. Preserve the sample and cost definition attached to any percentage you report, and do not combine unlike studies into one headline number.
Technical notes for menu and tax data
DoorDash’s developer documentation describes implementation-specific distinctions that can matter when collecting menu data. It says item-level tax rates can be supplied in non-Marketplace Facilitator states, while DoorDash calculates tax in Marketplace Facilitator jurisdictions. If a menu does not supply tax rates, DoorDash says it relies on a third-party tax engine. The documentation also says sugary-drink tax can be included where applicable, while bottle fees are not collected unless the merchant specifies them in the menu. These details belong in an integration context and should be checked against current documentation before technical use. DoorDash menu and tax documentation.
