Start by checking how you measured the flour and whether the dessert baked in the specified pan for the right amount of time. For cake, also follow the recipe’s mixing cues: too little mixing can leave a weak, uneven crumb, while too much can make it tough. And a dense brownie may be exactly what the recipe intended.
Start with the symptom and the recipe
Before changing your method, compare the result with the recipe’s intended texture. Dryness and crumbling often point to too much flour or, for cake, overbaking. A dense cake may involve mixing or baking issues. Brownies are different: fudgy and compact can be the goal, not a fault.
Make one change at a time on the next batch. Changing flour measurement, mixing, pan size, and bake time together makes it harder to tell which adjustment helped.
Dry or crumbly cake and cookies: check the flour first
Too much flour can leave baked goods dry or crumbly. Measuring by volume is less consistent when flour gets packed into the cup. King Arthur Baking’s flour-measuring guidance notes that the amount in a cup depends on how densely the flour is packed; its kitchen-scale guidance connects excess flour with dry, crumbly cake and cookies.

- If you have a scale: weigh the flour using the amount specified by your recipe. A digital kitchen scale is optional, but it can make flour measurement more consistent.
- If you use cups: use the method the recipe specifies. Don’t scoop and compress flour into the cup unless the recipe instructs you to do so.
- Don’t substitute a universal conversion: use the recipe’s own weight or volume directions rather than assuming one cup-to-gram amount applies to every flour and recipe.
King Arthur Baking says a useful first question when troubleshooting is, “How did you measure your flour?” The question appears in its Baker’s Hotline context; it is a prompt to check your method, not proof that flour caused every dry dessert.
Dry cake: check the pan and doneness
Overbaking is another cause of dry cake. King Arthur Baking also cautions that using a larger pan than the recipe specifies can contribute to overbaking. A different pan can change how the batter bakes, so don’t carry a bake time over from another recipe or pan and assume it will be accurate.

- Use the pan size specified in the recipe.
- Start checking doneness when the recipe says to, and use its stated visual or other cues.
- If you changed the pan, don’t assume the original bake time will produce the same result.

Dense or uneven cake: follow the mixing cue, not a “mix less” rule
Hand mixing does not mean stopping as soon as the ingredients first come together. In one King Arthur Baking test-kitchen account, a cake had a dense, gummy layer at the bottom; more mixing resolved that recipe’s problem. The explanation was that the batter had not developed enough structure to rise evenly. The opposite can also happen: excessive mixing can develop gluten and make cake tough. These are recipe- and method-dependent outcomes, not a reason to apply one mixing time to every cake.

- Follow the recipe’s visual and timing instructions for mixing.
- Scrape the bowl when directed so ingredients at the sides or bottom are incorporated.
- Check that no pockets of dry flour remain, while avoiding extra mixing beyond the recipe’s cue.
King Arthur Baking describes the undermixing example in its article on undermixed cake batter and discusses dense or collapsed cake streaks in its 2026 guidance on cake cleaching. Together, these examples show why “always mix less” is not a reliable fix.
If your recipe uses creaming
For recipes that cream ingredients, pay attention to the recipe’s ingredient-temperature and incorporation instructions. When eggs are added gradually, the mixture is more likely to maintain an emulsion. King Arthur Baking notes that trying to repair a fully broken mixture later can take extra mixing, which risks toughening the cake. Dense brownies: decide whether the texture is actually wrong
Brownies can be fudgy, chewy, or cakey. A compact, moist center may fit a fudgy recipe; judge it against the style the recipe promises before trying to make it lighter. Flour, eggs, leavener, liquid, fat, and mixing choices all affect the result. King Arthur Baking explains these differences in its guide to fudgy, chewy, and cakey brownies.

King Arthur Baking says minimizing air and melting butter with sugar can help produce a fudgier brownie, while more leavener can make brownies airier. Those are style choices, not universal repairs. Use the brownie recipe’s own doneness cues
Brownie doneness depends on the recipe and pan. For King Arthur Baking’s Ultimate Chewy Brownies, the recipe describes moist crumbs on a toothpick and provides an internal-temperature check; it also notes bake-time variation by metal pan. Follow the cues for the recipe you are making. An instant-read thermometer can be useful when a recipe gives a temperature, but it is not a requirement for every dessert.
Can you fix a dessert after it has baked?
The guidance cited here explains causes and prevention; it does not establish a reliable general way to reverse a fully baked dry, crumbly, or dense texture. You can serve leftovers in another format if you like, but that repurposes the dessert rather than restoring its original crumb.
