Choose an ingredient you already have that performs a similar job. This can save a special shopping trip, but the dish’s flavor, texture, appearance, or cooking time may change.
Start by identifying the ingredient’s job
Match function before matching names. An ingredient may serve more than one purpose, so consider what the recipe needs from it and what else in the dish already provides.
- Liquid or moisture: Check whether the recipe needs the ingredient to loosen a sauce, hydrate dry ingredients, or add moisture.
- Acidity: A sour ingredient can contribute tang as well as affect the balance of a dish.
- Thickening: A thickener is not automatically interchangeable with the same volume of flour or another thickener; use a ratio documented for that specific purpose.
- Binding or structure: In recipes that depend on ingredients holding together or rising, a swap can alter the result.
- Fat, seasoning, or bulk: Consider whether the replacement adds richness, saltiness, heat, or volume—and whether the recipe already gets those qualities elsewhere.
University of Illinois Extension organizes its egg-substitution advice by the function the replacement needs to serve and notes that flavor and texture may change. That functional approach is useful beyond eggs: first decide what the recipe needs, then look for an available ingredient that can do it. Check how sensitive the recipe is
Soups, stews, and flexible simmered dishes
A soup or stew often gives you more room to vary ingredients than baking does. You can usually assess the dish as it cooks and adjust its liquid or seasoning, but a substitution is not guaranteed to work: it may still change flavor, thickness, or cooking time.

Baking and recipes that depend on structure
Baking is less forgiving because ingredients can contribute structure, moisture, and leavening in specific ways. A replacement may change appearance, taste, texture, or how long the food takes to cook. If the missing ingredient is central to the structure or leavening and you are unsure of a suitable swap, choose a tested recipe built around what you have instead of improvising a major change. The available substitution charts are examples, not tests of every possible recipe.
Use measured swaps in their stated context
USDA’s Recipes for Child Care ingredient substitution chart gives these starting points. Read the recipe as a whole: a replacement can add liquid or seasoning that the rest of the ingredients may need to account for.

A USDA SNAP-Ed Healthy Eating on a Budget resource also suggests plain yogurt in place of sour cream, and 6 ounces of tomato paste plus 1 cup of water in place of a 15-ounce can of tomato sauce. These are the quantities and context given in that resource; they are not guaranteed exact equivalents across brands or dishes.
Make the pantry-first decision
- Look at what you already have. USDA’s budget guidance recommends substituting with ingredients on hand, rather than making a special trip for every missing item.
- Match the ingredient’s role. Decide whether the recipe needs moisture, acidity, thickness, binding, flavor, fat, or bulk.
- Check the recipe type. Be more cautious when a swap affects structure or leavening, especially in baking.
- Use a documented ratio when one fits. Treat a chart’s measurement as a starting point for its stated application, not a universal rule.
- Account for what the replacement adds. Consider its liquid, flavor, and seasoning before changing anything else in the recipe.
- If no suitable swap is available, change recipes. Choose a dinner designed around the ingredients you have rather than forcing a poor match.

What to expect from a substitution
Even a sensible swap can produce a different result. Food Network’s ingredient substitution guide warns that appearance, taste, and texture may change; it also notes that egg substitutions can affect texture and cooking time. Treat the result as a practical adaptation, not a promise that the dish will turn out exactly as written.
