Most baking substitutions work only when they preserve the missing ingredient’s job in the recipe. Before swapping, consider whether it supplies acidity, moisture, fat, binding, structure, sweetness, or lift. The ratios below are practical starting points—not guarantees of identical flavor, color, texture, or volume.

How to choose a baking substitute

Start with the recipe, not just the ingredient name. A swap that works in pancakes may fail in a cake that depends on whipped eggs for structure. Utah State University Extension’s 1992 substitution chart cautions that a replacement may not perform exactly like the original; treat its ratios as options to try, not universal equivalents.

  • Preserve acidity when it matters. Baking soda needs an acidic ingredient in the cited baking-powder replacement formulas.
  • Keep liquid and fat in balance. A substitute may add or remove moisture, fat, or sugar, changing tenderness and spread.
  • Consider flavor and color. Molasses, fruit purée, and dairy substitutes can be noticeable, especially in simply flavored bakes.
  • Match the ingredient’s structural role. Binding an easy muffin batter is different from aerating a sponge cake.
  • Measure consistently. Weight is often more reproducible than volume; keep flour weights tied to the named brand and measurement basis.

What can I substitute for buttermilk?

For 1 cup buttermilk, stir 1 tablespoon vinegar or lemon juice into enough milk to make 1 cup, then let it stand for 5 minutes. Utah State University Extension lists this option in its 1992 chart. Plain yogurt is another option from the same chart.

For thicker dairy, King Arthur Baking reports that Greek yogurt thinned with milk worked particularly well in its biscuit and pancake comparisons. In its cake example using baking soda, plain milk—without buttermilk’s acidity—produced a darker, denser result. The outcome depends on the recipe; a strongly flavored cake may mask dairy flavor differences more readily than a short-ingredient-list bake.

Can I substitute baking soda for baking powder?

Not by using baking soda alone. Baking soda needs acid, and it is not a direct one-for-one replacement for baking powder. For 1 teaspoon baking powder, Utah State University Extension’s 1992 chart gives 1/4 teaspoon baking soda plus 5/8 teaspoon cream of tartar. Its other listed formulas also pair baking soda with an acidic ingredient, such as soured milk or vinegar or lemon juice with milk.

What can I use instead of eggs in a cake?

First ask what the egg does in that particular recipe: eggs can bind, add moisture, contribute richness, or provide structure and aeration. For suitable egg-free recipes, King Arthur Baking identifies 1/4 cup aquafaba per egg as a consistent starting point in its 2021 guide. It also discusses fruit purées, starch slurries, yogurt, and commercial egg replacers, but these do not behave alike: purées add their own flavor and moisture, starch slurries are less reliable, and larger amounts of yogurt can weigh down a bake. Follow a commercial replacer’s package directions because products differ.

Casual substitution is a poor bet for egg-heavy custards, soufflés, sponge, chiffon, or angel food cakes, and recipes that depend on whipped egg ribbons or stiff whites for structure or lift. King Arthur Baking’s egg-substitute comparison used basic muffins; its results should not be assumed to transfer to recipes where eggs play a different role. Gluten-free recipes that rely on eggs for structure may also be difficult to adapt.

How much flour is in a cup?

For King Arthur Baking’s unbleached all-purpose flour, 1 cup is 120 g; the company recommends weighing flour when possible. That is a brand-specific reference, not a universal weight for every flour or every way of filling a cup.

Utah State University Extension’s 1992 chart gives volume conversions specifically for 1 cup sifted all-purpose flour: use 1 cup unsifted all-purpose flour minus 2 tablespoons, or 1 cup plus 2 tablespoons cake flour. Keep the sifted or unsifted basis attached to those quantities; changing it changes the comparison.

When are baking substitutions most dependable?

A simple quick bread, muffin, or pancake batter may be more forgiving than a bake whose volume and structure depend on the missing ingredient. That is not a guarantee: even a modest change to acidity, liquid, or fat can affect the result. Use the recipe’s function and the specific substitute—not a general claim that one ingredient “works everywhere”—to decide whether to proceed.

A kitchen scale can help reproduce a recipe’s intended quantities, particularly for flour, but precise measurement cannot make two ingredients perform the same function.
