Use the recipe’s own gram weight when it provides one; otherwise, look up the exact ingredient and preparation in a reliable weight chart, then scale that figure to the amount you need.
Why cups do not convert to one fixed number of grams
A cup measures how much space an ingredient occupies; a gram measures how much it weighs. A cup of water and a cup of flour take up the same volume but have different masses. Even the same ingredient can weigh differently depending on whether it is sifted, packed, chopped, or measured loosely.
That is why charts list separate weights for specific ingredients and preparations. The figures below are examples from King Arthur Baking’s Ingredient Weight Chart, a live reference accessed October 4, 2026; they are not interchangeable or universal conversions.

How to convert a recipe amount to grams
- Check the recipe first. If it gives a gram amount, use that value for that recipe rather than substituting a generic chart figure.
- Match the ingredient and preparation. If no weight is provided, find the same ingredient and form in a reliable weight chart—for example, packed brown sugar rather than loosely filled brown sugar.
- Multiply the chart’s weight by the amount in cups. For instance, using King Arthur Baking’s 120 g per cup figure for all-purpose flour, 2 cups correspond to 240 g (120 × 2), and 1/2 cup corresponds to 60 g (120 × 1/2). These are calculations from that chart value, not a claim that every recipe uses the same flour weight.
How to weigh ingredients on a kitchen scale
- Place an empty bowl on the scale.
- Use the scale’s tare function to reset the display to zero.
- Add the ingredient until the display reaches the recipe’s gram target.
King Arthur Baking recommends weighing ingredients with a digital scale for best results. Its measurement guide explains the corresponding volume-measuring methods. In its flour example, the guide says a result within 5 g above or below the written flour amount will not affect that recipe; treat this as guidance for that example, not a guarantee for all ingredients or recipes.

How to measure by volume if you do not have a scale
For flour
Flour is easy to compact, so scooping it directly with the measuring cup can put more into the cup than intended. King Arthur Baking’s flour-measuring guide, published October 13, 2023, recommends fluffing the flour, spooning it into a dry measuring cup until it overflows, and leveling the top with a straight edge. Do not dig the cup into the flour bag or press the flour down.
For other dry ingredients
Use a dry measuring cup. Spoon the ingredient in gently and sweep away excess where appropriate; follow any recipe instruction about packing, sifting, or another preparation, since that changes the measurement.

For liquids
Use a liquid measuring cup on a level surface and read the line at eye level. This makes it easier to align the liquid with the intended mark.

Before deciding that one chart is wrong, compare what each one is measuring. Differences can reflect preparation, measuring technique, rounding, or the cup standard used by a recipe. King Arthur Baking notes that chart weights can differ slightly from gram amounts on its recipe pages because of rounding and similar factors, and advises following the recipe’s weight when comparing the two.

- Ingredient and variety: Confirm that both entries refer to the same ingredient, such as all-purpose flour rather than another flour.
- Preparation: Check whether it is packed, sifted, chopped, drained, or otherwise prepared.
- Measuring method: A loosely spooned cup may not contain the same amount as a compacted or scooped cup.
- Cup definition and region: Identify the original recipe’s country or stated cup size. The cited King Arthur Baking pages do not establish one cup definition for every international recipe.
- Rounding and recipe-specific choices: Prefer the recipe author’s own gram amount for that recipe if one is supplied.
