There is no universal espresso grind setting: the right grind depends on your grinder, coffee, basket and recipe. Start with the setting recommended for your specific machine, keep dose and target yield steady, then adjust in small steps: grind finer to slow a fast shot and coarser to speed up a slow one. Use shot time as a clue, but let taste guide the final choice.

What grind size should you use for espresso?

Use a fine grind that lets your espresso flow at a pace and taste you want. The number on the grinder is not transferable between models because each scale and calibration is different. For example, Breville recommends starting at setting 15 on the Barista Pro’s 30-setting scale, while its Oracle Jet manual recommends setting 30 on that model’s 45-setting scale, where 1 is finest and 45 coarsest. If your grinder or espresso machine provides a suggested starting range, use it. Otherwise, consult its manual rather than copying a number from another grinder. A grinder also needs enough fine range and sufficiently small adjustment steps to dial in espresso; some grinders are not designed to do that reliably. How to dial in espresso grind size

  1. Choose a repeatable recipe. Use a dose that suits your basket and set a target yield. A common starting point is a 1:2 ratio in about 25–30 seconds—for example, 18 g of coffee in and 36 g of espresso out. La Marzocco presents this as a starting recipe for a new coffee, not a rule for every setup or taste. See La Marzocco Home’s espresso guide.
  2. Prepare the puck consistently and pull a shot. Keep your distribution and tamping approach as consistent as you can. Record the grinder setting, dose, yield and shot time. A scale helps repeat dose and yield; it does not identify the correct grind by itself.
  3. Adjust according to flow. If the shot runs too quickly, move finer by a small amount to increase resistance and slow the flow. If it runs very slowly or nearly chokes, move coarser. Change one variable at a time where possible, so you can tell what affected the result. Fellow and Lavazza’s espresso preparation guide describe these general adjustment directions.
  4. Taste the result, then repeat if needed. Time and appearance help you diagnose flow, but they do not prove that the espresso tastes good. La Marzocco specifically cautions against relying on visual cues alone. If the result is off, make another small adjustment and record the next shot.

Diagnose a shot without changing everything at once

What you observe Possible explanation What to try
Fast flow or a short shot The grind may be too coarse. Under-dosing or channeling can also contribute. First check that dose and puck preparation are consistent; then try a slightly finer grind.
Very slow flow or a shot that nearly chokes The grind may be too fine, or the basket may contain too much coffee. Check the dose, then try a slightly coarser grind.
Sour, thin-tasting espresso Under-extraction is one possible cause; grind size is not the only factor. Try a small move finer, then taste again. Consider channeling, dose, roast profile and coffee age as well.
Bitter or dry espresso with slow flow A grind that is too fine may be contributing. Try a small move coarser and evaluate the next shot.

These are diagnostic clues, not guarantees. Coffee age, roast profile, puck preparation, dose and shot profile can affect both flow and flavor. A fast shot does not automatically mean the grind is the sole problem, and a particular time does not by itself establish quality. Fellow’s guide covers these troubleshooting cues.

What if one grinder step is too large?

Some grinders make larger adjustments than espresso dialing ideally requires. If the next setting changes the shot too much, Fellow suggests considering a small dose adjustment. Make that change deliberately and track it separately rather than changing dose and grind together without recording either.

If the grinder cannot reach a fine enough range for espresso, a different espresso-capable grinder may be needed. Fellow also notes that, in the product context it discusses, a double-wall basket may be relevant. This is not a substitute for checking your machine and basket guidance.

What to look for in an espresso grinder

For espresso, prioritize whether the grinder can reach an espresso-fine range and make small, repeatable adjustments. Clear operating directions and a model-specific starting point make the dialing-in process easier. Numbered scales are not standardized, as the distinct Breville Barista Pro and Oracle Jet recommendations illustrate.
