Yes—in many conventional ovens, a broiler-safe metal rack set over a rimmed metal baking sheet can stand in for a broiler pan. The rack lifts food above its juices and the sheet catches drippings. Before using this setup, check that both pieces are approved for broiler heat and that your specific oven permits them; some modes require a supplied tray or prohibit wire racks.
What to use instead of a broiler pan
A typical broiler pan has a perforated or slotted upper rack above a lower drip pan. You can reproduce that arrangement with an oven- and broiler-safe rack placed on a rimmed metal sheet pan. Maytag recommends this substitute for many ovens: Maytag’s broiling guidance explains that the rack keeps food above drippings while the pan catches them.
The alternatives are not interchangeable in every oven. Use the one that the oven manual and cookware maker both allow.

Check your oven and cookware before broiling
Broiling rules depend on the appliance and cooking mode, so consult the owner’s manual before choosing a substitute. A setup that works in a conventional oven may be prohibited in another mode. For example, GE says its Advantium broiling mode requires its specified metal tray and prohibits wire racks. - Check the cookware maker’s instructions as well as the oven manual. Ordinary baking safety does not establish that a pan or rack is suitable for direct broiler heat.
- Use a rimmed pan under a rack so it can catch drippings, and make sure the arrangement fits the oven as instructed.
- Do not assume glass is suitable: Thermador warns against heat-proof glass in its broiling guidance. Apply that warning to the specified Thermador guidance, and follow the applicable instructions for your own appliance. Thermador
- Follow the model’s directions for rack position, clearances, door position and timing. These are not universal settings; keep the oven clean and monitor food closely because broiling uses intense heat.
Check doneness with a thermometer
For poultry, use a food thermometer rather than judging doneness by browning. USDA Food Safety and Inspection Service guidance sets 165°F (73.9°C) as the safe minimum internal temperature for poultry.
