Does gochujang contain wheat or gluten? It can: formulations may include wheat-related ingredients, but the name “gochujang” does not tell you whether a particular product contains wheat or qualifies as gluten-free. Check the specific package’s full ingredient list, wheat allergen declaration, and any gluten-free claim. If those details do not answer your question, contact the manufacturer.
Check the package in this order
- Read the entire ingredient list. Look for wheat flour, wheat protein, and other wheat-derived ingredients. Soy sauce and fermented wheat protein are among ingredient categories relevant to gochujang formulations; their presence is not universal. The Codex Alimentarius Commission describes gochujang as a fermented red or dark red paste and lists possible ingredient categories in its Standard for Gochujang, CXS 294-2023.
- Look for the wheat allergen declaration. In the United States, wheat is a major food allergen. Its source must be identified in the ingredient list or in a “Contains” statement. FDA explains allergen labeling in its Food Allergies guidance. A wheat declaration is important for people with a wheat allergy, but it does not by itself establish whether the product meets the gluten-free rule.
- Check for a gluten-free claim and read the surrounding label. In the United States, use of the claim is voluntary, but FDA defines it. A food bearing a gluten-free claim generally must contain less than 20 parts per million (ppm) of gluten and satisfy requirements for ingredients derived from wheat, rye, barley, and their crossbred hybrids. The equivalent claims “free of gluten,” “without gluten,” and “no gluten” are also covered. See the FDA’s Questions and Answers on the Gluten-Free Food Labeling Final Rule.
- Contact the manufacturer if the answer is still unclear. FDA advises consumers with questions about ingredients or gluten-free status to check the manufacturer’s website or contact the company. Use information for the specific product and current package, since formulations and labels can change.
Why fermentation does not settle the gluten question
Gochujang is fermented, but fermentation should not be treated as a gluten-removal step. FDA says conventional methods may not adequately detect or quantify gluten in fermented or hydrolyzed foods. For fermented foods carrying a gluten-free claim, manufacturers must keep records addressing gluten levels before fermentation, cross-contact evaluation, and controls when a cross-contact risk has been identified. The claim therefore depends on the applicable rule and the manufacturer’s supporting records—not simply on the fact that a paste is fermented.
How to interpret wheat and gluten information together
A wheat declaration and a gluten-free claim answer different labeling questions. A product may, in circumstances allowed by the FDA rule, use wheat processed to remove gluten. If such a product bears a gluten-free claim and declares wheat, specified disclaimer requirements apply. Read the full label rather than treating a wheat declaration as a gluten measurement or assuming that the absence of a wheat declaration proves a product is gluten-free.
What a product example can—and cannot—tell you
A Daesang America specification sheet for one commercial product, O’Food Gochujang, declares wheat-containing ingredients and says the product is not gluten-free. That is a concrete example of why labels matter; it does not establish the ingredients or status of other brands, recipes, or current versions of the product. The Codex standard likewise describes possible ingredient categories, not a universal recipe.

When the label is not enough
- For a wheat allergy, use the wheat allergen declaration and ingredient list; ask the manufacturer if the product’s labeling is unclear.
- If you need to avoid gluten, do not infer gluten-free status from fermentation, the absence of an obvious wheat ingredient, or a wheat declaration alone. Look for a gluten-free claim and review its context.
- Check the package you are buying rather than relying on an older label or a description for a different product version.
