Pasta with peas, herbs, ricotta and lemon works best when the ricotta is loosened with hot, starchy pasta water until it coats the noodles. Use lemon zest for fragrant citrus character, add juice to taste, and finish with peas and fresh herbs. The exact quantities and timing depend on the recipe you use; this guide explains the choices that shape the dish without presenting an untested formula as a verified recipe.

How the ricotta sauce comes together

Ricotta on its own can be too thick to coat pasta evenly. The useful technique is to combine it with grated hard cheese and lemon, then work in hot pasta water a little at a time. The starch in the water helps the mixture emulsify and cling to the noodles.

Cook the pasta in salted water and reserve some of that water before draining. Toss the hot pasta with the ricotta mixture, adding small splashes of water until the sauce reaches a loose, coating consistency. Related lemon-ricotta recipes use this approach, including Mise’s bucatini or spaghetti version and Foolproof Living’s lemon ricotta pasta. Their quantities are specific to those recipes, not established proportions for this dish.

Balance lemon, peas and herbs

Lemon zest and juice

Zest the lemon before juicing it. Zest brings fragrant citrus character; juice adds acidity, so add it gradually and taste as you go. The closest matching lemon-ricotta example uses both zest and juice, but the balance is a matter of preference.

Peas

Fresh or frozen peas both suit the combination. One related recipe suggests adding blanched peas shortly before draining the pasta, while another pairs peas with ricotta in a baked dish. For this preparation, add peas late enough to warm them without making them softer than you want. The exact timing depends on whether they are fresh, frozen, or already cooked.

Herbs

Basil is a natural option, and parsley also works; a mixture can give the dish a less basil-led finish. Fold herbs in near the end so their fresh character remains prominent. The title does not specify a single required herb blend.

Choose a pasta shape that holds the sauce

Long pasta such as spaghetti or bucatini works well with a coating sauce. Short shapes such as rigatoni or penne are another option and can catch peas and ricotta in their ridges or openings. Related recipes use both long and short shapes, so there is no canonical shape for this recipe concept. Choose what you enjoy and adjust the pasta water until the ricotta coats it.

Ways to tailor the dish

  • Brighter: emphasize zest and add lemon juice in small increments for sharper acidity.
  • More herb-forward: use basil as the main herb, or choose parsley or a mix for a different profile.
  • More distinct peas: warm tender peas briefly and fold them in near the end; for a softer, more integrated result, let them spend longer with the hot pasta.
  • Different texture: choose long strands for a more continuous coating or a short shape that catches individual peas.

These are practical adaptations, not tested outcomes for a single fixed formula. Ingredient pairings are also reflected in Menu Mistress’s pea, courgette and ricotta lasagne and in the spring pasta examples listed by Barilla.
