A USDA MyPlate baked-meatballs recipe sets the oven to 425°F. That is one recipe’s oven setting, not a universal rule. To check whether meatballs are safe to eat, measure their center with a food thermometer: ground beef, pork, lamb, or veal should reach 160°F (71.1°C), while ground poultry should reach 165°F (73.9°C).
Oven temperature and safe doneness are different
The oven setting controls the heat around the meatballs; the internal temperature tells you whether the center has reached a safe temperature. The USDA MyPlate Baked Meatballs recipe uses 425°F. Other recipes may use a different oven setting, so follow the instructions for your recipe and check the meatballs internally.
What temperature should meatballs reach inside?

These are minimum internal temperatures, not oven settings. The USDA FSIS chart advises cooking food to its listed minimum temperature, measured with a food thermometer, before removing it from the heat.
How to check meatballs with a thermometer
- Choose the target for the type of ground meat in your recipe: 160°F for beef, pork, lamb, or veal; 165°F for poultry.
- Insert a food thermometer into the thickest part of a meatball, taking care to measure the center rather than just the surface. Follow the thermometer’s instructions for an accurate reading.
- If the center has not reached the applicable target, continue cooking and check again.
Color is not a reliable way to tell whether ground meat is safely cooked. USDA FSIS notes that ground meat can change color before reaching its safe temperature; appearance alone cannot confirm doneness. See its guidance on meat and poultry color.

How long do meatballs take to bake?
There is no single baking time that applies to every meatball. Size, recipe, and meat mixture vary, and the cited USDA recipe and temperature guidance do not establish a general cooking duration. Treat the time in your recipe as an estimate and use a thermometer to verify the center.
