Gochujang is not automatically safe or unsafe for everyone avoiding wheat or gluten: recipes vary, and some gochujang formulations can include wheat-related ingredients. Check the exact package’s ingredient list and allergen declaration if you have a wheat allergy; if you avoid gluten, look for a gluten-free claim that meets U.S. FDA rules. Fermentation does not remove gluten.

Wheat allergy and gluten avoidance are different

Wheat allergy

Wheat is one of the major food allergens covered by U.S. FDA labeling rules. When wheat is used as an ingredient in a covered packaged food, its source must be identified in the ingredient list, in parentheses after the ingredient, or in a separate “Contains” statement. That wheat declaration matters for people avoiding wheat because of an allergy. See the FDA’s food-allergy labeling guidance.

Gluten avoidance

Gluten occurs in wheat, rye, barley, and crossbreeds of those grains. A gluten-free claim is voluntary in the United States, but a food bearing that claim must meet the FDA’s definition: unavoidable gluten must be below 20 parts per million, and ingredients derived from gluten-containing grains are subject to restrictions. A gluten-free claim and a wheat-free claim are not interchangeable. FDA describes circumstances in which a food may carry a gluten-free claim while declaring wheat processed to meet the gluten rule, with explanatory labeling. Celiac disease and non-celiac gluten sensitivity

A food label cannot diagnose celiac disease or explain an individual’s symptoms. The National Institute of Diabetes and Digestive and Kidney Diseases advises people who think they may have celiac disease to talk with a doctor about testing before starting a gluten-free diet; beginning the diet first may affect test results. For personal dietary decisions involving suspected sensitivity or other symptoms, seek clinical advice rather than relying on a product label alone. Why gochujang needs product-by-product checking

The Codex Standard for Gochujang (CXS 294-2023) defines it as a red or dark-red pasty fermented food and includes ingredient categories that can involve soy sauce, fermented soybean paste, and fermented wheat protein. This makes wheat-related ingredients relevant possibilities; it does not mean every gochujang contains wheat. The standard describes a food category, not the formulation of every retail product. Do not assume that fermentation has removed gluten. FDA says fermentation is not considered a process that removes gluten, and conventional analytical methods may not accurately detect or quantify gluten in fermented foods. Its gluten-free rule sets requirements for claims on fermented or hydrolyzed foods and foods containing such ingredients. How to check a tub of gochujang

  1. Read the current package, not just a product listing. Review the full ingredient list and the wheat allergen declaration. Formulations and labels can change, and a general description of gochujang cannot establish what is in a particular tub.
  2. If avoiding gluten, look for a gluten-free claim. In the United States, that claim has a defined FDA standard, including less than 20 ppm for unavoidable gluten. Do not treat “wheat-free” as equivalent to “gluten-free.”
  3. Do not use fermentation as a safety shortcut. FDA does not consider fermentation a gluten-removal process.
  4. Do not read silence about cross-contact as a guarantee. Voluntary “may contain” or shared-facility advisory statements are not required by law, so the absence of such a statement does not prove cross-contact cannot occur.
  5. Ask the manufacturer if something material is unclear. Contact it about ingredients, gluten status, formulation, or cross-contact where the package does not answer your question.   6. Talk with a doctor before changing your diet if celiac disease is possible. Ask about testing before beginning a gluten-free diet.

Compare products using the same checks

There is no brand-level safety conclusion that applies to every shopper or every package. For each tub under consideration, use the same questions:

  • Does the current ingredient list identify wheat or wheat-derived ingredients?
  • Does the package make a gluten-free claim?
  • Has the manufacturer clarified any unresolved ingredient, formulation, or cross-contact concern?
  • Does the product fit the dietary advice you have received from a clinician?

For U.S. shoppers, FDA labeling rules provide a useful framework, but the exact package and the individual’s medical needs still matter. The Codex standard is international and does not replace a retail label check.
