What is different about its NXTPAPER display?

Those are manufacturer descriptions of the display, not independently established outcomes for every user or viewing environment. TCL’s specifications identify the panel and refresh rate.
A 120Hz refresh rate means the screen can refresh more frequently than a conventional 60Hz display, which can make scrolling and compatible animations appear smoother. It is separate from the NXTPAPER surface and filtering features: the high refresh rate concerns motion, while TCL’s reduced-glare and blue-light claims concern viewing comfort.
How does Max Ink reading mode work?
The physical NXTPAPER Key switches the phone into Max Ink Mode, which TCL describes as a monochrome, e-reader-like view that mutes notifications. That can make a long reading session less visually busy and reduce interruptions without requiring a separate e-reader. The phone remains a smartphone; the mode changes how reading is presented rather than turning the device into dedicated e-ink hardware.
