To stop desktop Chrome from signing the browser into your Google Account when you sign in to a Google service, open Chrome’s profile menu, select Google Services Settings, then under Other Google services choose Don’t sign in. If Chrome is already signed in, sign out separately from the profile menu.
Change Chrome’s browser sign-in preference

Under Other Google services, select Don’t sign in. Google says this keeps Chrome signed out when you sign in to a Google Account through a service such as Gmail. Google Chrome Help: Sign out of Chrome – Computer
Google describes the browser sign-in choice as optional: when you sign in to a Google service, Chrome may ask whether you also want to sign in to the browser. The preference controls that browser sign-in behavior; it does not mean you must stop using Google services in Chrome.

If Chrome is already signed in
Changing the preference governs later sign-in behavior; it is separate from ending the current browser sign-in. To sign out now, open the profile menu and select Sign out of Chrome. Google Chrome Help: Sign out of Chrome – Computer
Check which kind of automatic sign-in is happening
A Google Account is signing Chrome in
Use the Don’t sign in preference under Other Google services. If Chrome is already signed in, use Sign out of Chrome as a separate step.

A website is using a saved password
That is a Password Manager behavior, not Chrome browser sign-in. Google Password Manager’s Sign in automatically setting controls whether saved credentials are used on supported websites and apps. Turn it off if you want confirmation before saved credentials are used; it does not prevent Chrome from signing into its browser profile. Google Chrome Help: Manage passwords in Chrome – Computer

A website offers sign-in through another identity service
Third-party sign-in prompts are a separate feature. Their controls do not replace Chrome’s browser sign-in preference, and a website or identity service may have its own sign-in behavior. Google Chrome Help: Learn about third-party sign-in – Android

If the setting is missing or locked
On a work- or school-managed browser, an administrator may control whether users can sign in to Chrome. Chrome Enterprise’s BrowserSignin policy can disable, enable, or require browser sign-in. Google’s exact menu path above is for Chrome on a computer. Do not assume the same labels or placement apply on Android or iOS; Chrome’s interface can vary by platform and version. Also, the browser sign-in preference is not a universal guarantee about whether every separate Google website session stays signed in after you sign out of Chrome. Avoid clearing cookies as the primary fix: it can affect website sessions without changing the browser sign-in preference.
