For routine sour-beer fermentation tracking, record pH and fermentation progress alongside yeast cell count and viability. Use titratable acidity when you need to compare total acidity, and a validated enzymatic assay or HPLC when you need the concentration of a specific acid. These measurements answer different questions: pH is not a direct acid-concentration reading or a reliable score for perceived sourness.

Which sour-beer compounds and process measures should you track?

Choose measurements according to the question you need answered. A routine fermentation log shows how a batch is progressing; acidity tests compare overall acidity or quantify a named compound. The measurements are complementary, not interchangeable.

Measure What it tells you What it does not establish
pH A routine process signal you can trend and compare with your brewery’s historical batches. It does not directly measure lactic- or acetic-acid concentration, and it is not a reliable measure of perceived sourness.
Gravity and fermentation kinetics Whether fermentation is progressing in line with prior batches. They do not identify which organic acids are present or their concentrations.
Titratable acidity A comparative measure of total acidity, useful for consistency checks, blending, and evaluating slow fermentations. It does not resolve the concentration of each individual acid.
Lactic-acid assay A validated enzymatic method can quantify lactic acid; HPLC can also be configured to measure it. The concentration alone does not determine the beer’s sensory impact.
HPLC for organic acids A validated HPLC method can quantify lactic and acetic acids together. Results should not be assumed equivalent to titration or another method without validation.
Broader aroma chemistry Specialist investigation can examine volatile acids, esters, alcohols, phenols, and other aroma-active compounds. One commercial-sample study does not establish a universal compound list or profile for every sour beer.

For general fermentation control, the American Society of Brewing Chemists (ASBC) guidance recommends daily gravity, pH, yeast cell count, and viability measurements, with fermentation kinetics compared against historical batches. It also recommends validating complete fermentation and using a forced or rapid fermentation when troubleshooting. This is general fermentation guidance—not a requirement to run an organic-acid assay every day.

Does pH tell you how sour a beer tastes?

No. pH is useful for tracking a process, but it does not reliably predict what a drinker perceives as sourness. In a 2015 Brewers Association presentation, speaker Kara Taylor put it this way: “When producing sour beers, a brewer typically measures the tartness of the beer by looking at the pH. Unfortunately, pH isn’t a great indicator of what the consumer is actually tasting.”

Keep pH in the log, but pair analytical results with sensory evaluation. A pH reading is not a substitute for tasting, and it cannot tell you how much lactic or acetic acid is present.

What is the difference between pH and titratable acidity?

pH and titratable acidity describe different aspects of acidity. pH is a process parameter; titratable acidity provides a comparative measure of total acidity. An ASBC sour-beer presentation describes titratable acidity as useful for assessing sourness relative to pH, including when checking consistency, blending, or slow fermentations. It also notes that lactic acid is the primary sour taste in many cases, while some beers have high acetic-acid levels.

Titration is therefore useful when the question is whether total acidity has changed or whether batches compare consistently. It does not tell you the individual concentration of each acid. A 2016 ASBC World Brewing Congress study found poor correlation among the three fundamentally different acidity methods it investigated, despite reporting that their precision appeared more than adequate. Trend results using a consistent method; validate a method change before treating readings as directly comparable.

How do you measure lactic or acetic acid?

Use a method designed for the compound-level question. The 2016 ASBC paper describes an enzymatic method specific to lactic acid and HPLC as a laboratory technique capable of measuring lactic and acetic acids together. These are specialist analyses rather than replacements for a routine fermentation log.

The paper describes one HPLC setup using chilled sample preparation, centrifugation, a C18 column, phosphate-buffer mobile phase at pH 2.4, and UV detection at 210 nm. Its ten-minute analysis was followed by wash and equilibration. The authors reported 0.08% relative standard deviation (RSD) for retention-time precision in replicate injections of a calibrant under that particular method. That figure is method-specific retention-time precision; it is not a universal claim about concentration accuracy in production samples.

Do not compare values from titration, an enzymatic assay, and HPLC as though they were interchangeable. The ASBC study’s poor cross-method correlations make consistent method selection—and validation when switching—especially important.

How should you build a practical tracking workflow?

  1. Establish a routine fermentation record. Record gravity, pH, yeast cell count, and viability daily, following the general ASBC sampling guidance. Note the sampling time and method so later readings can be interpreted consistently.
  2. Compare like with like. Compare fermentation kinetics with the brewery’s historical batches, taking account of the process and culture used. Use the same analytical method for a trend unless a method change has been validated.
  3. Choose an acidity test to match the decision. Use titratable acidity to compare total acidity. For a lactic-acid concentration, use a validated enzymatic assay or an appropriate HPLC method; HPLC can also be configured for acetic acid.
  4. Validate fermentation when needed. If completion is uncertain or progress is abnormal, ASBC guidance recommends checking complete fermentation and using a forced or rapid fermentation to troubleshoot.
  5. Interpret the results with a sensory check. Use tasting alongside measurements rather than treating pH or an acid concentration as a stand-alone prediction of perceived sourness.

Why process and culture belong in the record

Acid results make more sense when considered alongside the fermentation path. Brewers Association style guidance describes sour-beer acidity as usually including lactic, acetic, and other organic acids. Acidity may come from acidified malt or be produced by microorganisms during kettle or post-wort fermentation; the acid balance and beer age also shape the character.

Kettle souring and mixed-culture fermentation do not follow the same sequence. In the Brewers Association’s description of kettle souring, lactic acid bacteria (LAB) acidify unhopped wort after an initial boil; a second boil and hop addition stop LAB activity before alcoholic fermentation proceeds. The Association also summarizes work in which LAB strain combinations with different Saccharomyces strains affect flavor profile. Record the process and culture with the measurements rather than assuming a single acid trajectory applies to every batch.

A peer-reviewed ASBC Journal paper describes yeast as producing mainly esters, higher alcohols, fatty acids, aldehydes, and sulfur compounds during alcoholic fermentation. In cereal-based substrates, it describes LAB as excreting primarily organic acids, aldehydes, and some esters. The paper also discusses diacetyl formation from alpha-acetolactate and its later uptake and reduction by yeast. These observations depend on process and culture; they do not define a universal schedule for when each compound rises or falls.

A 2013 ASBC conference proceedings abstract by Shi Feng and Michael Qian reports aroma-active acids—including acetic, butanoic, and several longer-chain acids—alongside esters, alcohols, phenols, and other compounds in one commercial sour-beer sample studied using GC-olfactometry and GC-MS. That finding illustrates how a specialist flavor-chemistry investigation can extend beyond primary souring acids; it should not be treated as an inventory that applies to every sour-beer style.

Are there target acid concentrations for sour beer?

The sources cited here do not establish a general target concentration for lactic acid, acetic acid, or other compounds that applies across sour-beer styles and production methods. Set process expectations using the beer’s intended profile and the brewery’s own comparable batches; do not infer a universal target from pH or from a result obtained with a different analytical method.
