Read the specific product’s label: follow its storage and preparation directions rather than assuming that “canned” means shelf-stable or ready to eat. A shelf-stable product labeled ready to eat can be eaten without reheating if the can is sound. If the label says “Keep Refrigerated” or gives cooking directions, follow them.

Check the label before opening the can

USDA Food Safety and Inspection Service (FSIS) guidance says that a product that is both shelf-stable and ready to eat does not need a safe-handling statement, cooking directions, or a “Keep Refrigerated” statement. That makes the absence of cooking directions consistent with ready-to-eat status for that kind of product, but it is not a universal test. USDA’s meat and poultry labeling glossary defines “OVEN PREPARED” as “Product is fully cooked and ready to eat.” Treat that phrase as useful confirmation on the product where it appears, not as a substitute for reading the rest of the directions. USDA FSIS: Meat and Poultry Labeling Terms

Distinguish shelf-stable cans from refrigerated products

What the label says What to do
Shelf-stable and ready to eat If the can is sound, the product can be eaten without reheating. Store the unopened can as directed.
“Keep Refrigerated” Do not store it at room temperature. Follow the package’s storage and preparation directions.
Cooking or preparation directions Follow those instructions; do not infer readiness from the fact that the food is in a can.

Some canned foods, including some canned ham, require refrigeration. Commercial canning commonly uses heat processing in sealed airtight containers, but “canned” alone does not establish that a specific product is shelf-stable or ready to eat. Inspect the can and contents; discard warning signs

Do not buy or eat food from cans that are bulging, leaking, or badly dented. USDA also advises against purchasing rusted or deeply dented cans. A can that looks normal does not override a “Keep Refrigerated” instruction or other package directions. Check applicable product or recall information separately if you have a safety concern.

  • INSTRUCTIONS: 1. Punch small hole in can top to release vacuum (optional).2. Attach key, handle down, to the tab.3. Hold can firmly by the top end and twist the key clockwise completely around the can.4. Remove the bottom end of can away from the meat. Hold can by the narrow end and shake the meat out.Note: If the key fails to remove metal strip properly, use an ordinary can-opener to remove both ends. Carefully push the meat from the top end.

Store unopened cans properly and refrigerate leftovers

USDA FSIS describes meat and poultry as low-acid canned foods and gives an unopened best-quality period of 2 to 5 years when stored in a cool, clean, dry place and the can remains in good condition. This is best-quality guidance, not a guarantee that damaged or poorly stored food is safe. USDA FSIS: Canned Foods

Once opened, transfer unused contents to a clean container, refrigerate them, and use them within 3 to 4 days. Opening the sealed container allows bacteria to enter, so unopened-can storage guidance no longer applies. USDA FSIS: Canned Foods

Heat for serving when the product is already cooked

Some fully cooked canned meat may be heated for serving rather than because cooking is needed for safety. Follow the product’s own directions. For fully cooked ham, USDA’s consumer guidance recommends reheating ham packaged in a USDA-inspected plant to 140°F and other fully cooked ham to 165°F; these ham-specific targets do not apply automatically to every canned meat.
