Keep perishable food cold at 40°F (4.4°C) or below while transporting it and storing it at home. Use an insulated cooler with enough ice or frozen gel packs for the trip, refrigerate perishables within two hours—or one hour when the surrounding temperature is above 90°F (32.2°C)—and verify your refrigerator and freezer with appliance thermometers. Food that looks or smells normal can still be unsafe after poor temperature control.
Keep food cold on the way home
- Shop for refrigerated and frozen food last. Get it home promptly. Avoid meat or poultry packages that are torn or leaking. See USDA FSIS guidance on basic food safety.
- Use an insulated cooler or bag for a trip with cold food. Pack it with plenty of ice, frozen gel packs, frozen beverages, or another cold source, and keep the food at or below 40°F. Minimize opening the cooler; keep frequently accessed drinks in a separate cooler if possible. USDA’s advice is to bring a cooler packed with a cold source when traveling with cold food (USDA: How Temperatures Affect Food; USDA: Keeping Food Safe During Travel).
- Keep raw animal products contained and separate. Prevent leaks from reaching ready-to-eat foods, and clean the cooler after use. For a long trip, a thermometer can help establish whether food stayed cold; a cooler’s performance depends on the cold-source capacity, ambient conditions, trip length, and how often it is opened. Do not assume a particular cooler or pack will hold a safe temperature for a fixed number of hours.
- Refrigerate cold takeout or delivered food promptly if you will not eat it right away: within two hours of purchase or delivery, or within one hour when the air temperature is above 90°F. If holding hot takeout hot, keep it at or above 140°F. See USDA FSIS guidance on food safety during emergencies.
How long can perishable food sit out?
Refrigerate perishable food within two hours, or within one hour if the surrounding temperature is above 90°F (32.2°C). This is the total time out of temperature control—not a fresh allowance each time food is moved between a cooler and a counter. Do not let food warm beyond the safe limit and then restart the clock. USDA defines the danger zone as 40°F to 140°F and gives the two-hour/one-hour rule in its Danger Zone guidance.
Set and check refrigerator and freezer temperatures
Set the refrigerator to 40°F or below and the freezer to 0°F or below. Use an appliance thermometer to check the actual temperature rather than relying on the appliance dial. Keep both doors closed as much as possible, especially during a power outage. USDA provides these household targets in its refrigeration guidance and food safety basics.

Cool leftovers quickly before storing them
A large, deep pot holds heat longer than smaller portions. Divide soup, meat, and other leftovers into shallow containers or smaller portions, then refrigerate promptly; do not wait for a large pot to reach room temperature. Shallow containers for leftovers help heat escape faster. USDA’s leftovers guidance recommends refrigerating within two hours, or within one hour when the surrounding temperature is above 90°F.

Food-service cooling rules are not household rules. The FDA Food Code 2026 is a model code for food establishments, and local adoption and exceptions matter. For covered cooked time/temperature-control food, it specifies cooling from 135°F to 70°F within two hours, then to 41°F or below within six hours total; listed methods include shallow pans, smaller portions, rapid-cooling equipment, and ice-water baths. Operators should follow applicable local code and their procedures. See the FDA Food Code 2026.
Understand spoilage, safety, and package dates
Spoilage bacteria can cause off odors, tastes, textures, or visible mold. Disease-causing pathogens may not change a food’s appearance, smell, or taste, so never taste food to decide whether it is safe. Some pathogens, including Listeria, can grow slowly at refrigerator temperatures. A food can look normal but be unsafe after temperature abuse; reduced quality alone does not establish the same safety risk. Most product dates generally indicate quality rather than safety; infant formula is an exception. Follow package handling directions, but do not treat a date as a guarantee if food was mishandled. USDA explains date labels in its food product dating guidance.

What to do after a power outage or temperature excursion
An unopened refrigerator keeps food safely cold for about four hours during a power outage, according to USDA; keep the door closed. If perishable food has been above 40°F for more than two hours, discard it. For freezer food, check the temperature or for ice crystals: USDA says food at 40°F or below or that still contains ice crystals may be refrozen or used, though quality may decline. Do not rely on outdoor weather to chill food. Use USDA’s emergency food charts for item-specific keep-or-discard decisions; guidance differs by food, so do not generalize one item’s rule to another.

Freezing at 0°F preserves food by stopping microbial growth while it remains frozen. Once thawed, handle perishable food as fresh. If partially thawed food still has ice crystals or is 40°F or below, USDA says it is safe to refreeze or use, although quality may decline. See USDA: Freezing and Food Safety.

Household cooler advice is not a substitute for controls required in food-service or commercial operations. FDA commodity guidance discusses suitable temperature controls, clean and sanitary vehicles, pre-cooling where appropriate, written procedures, and actions when a material temperature-control failure could make food unsafe. Requirements and thresholds can depend on the commodity and jurisdiction. For example, the FDA’s fresh-cut produce guidance discusses a 41°F finished-product ceiling in its specific fresh-cut tomato context; that value should not be treated as a universal limit for every food.
