To remove a city from Weather on iPhone, open the app, tap the Location List button, swipe left on the city, and tap Delete. This removes it from your saved locations; changing the city shown in a Weather widget is a separate action.
Remove a city from the Weather location list

Open the Weather app on your iPhone.

Tap the Location List button to see your saved locations.

Swipe left on the city you want to remove.

Tap Delete.
Apple documents this action as removing a location from the saved list. The button’s icon or placement may vary by iOS version or interface. See Apple’s guide to checking weather in other locations on iPhone.
If you meant the city shown in a Weather widget
Deleting a saved location and changing a widget’s displayed location are different tasks. To change the widget, touch and hold it, tap Edit Weather or Edit Stack, tap the displayed location, then choose the location you want. Apple documents these controls in its guide to using Weather widgets on iPhone.

What happens on your other devices
Apple says the saved Weather location list stays up to date across devices signed in to the same Apple Account. An edit to the list may therefore appear on those devices too. Apple’s instructions do not describe an undo feature; if you want the location again, you can search for it and add it back to the list.
