To stop your Galaxy from automatically downloading system updates over Wi-Fi, open Settings > Software update and turn off Auto download over Wi-Fi. Some devices or carriers use the label System updates. With the option off, Samsung says you must start updates manually. This controls system-update downloads—not Play Store app updates—and does not promise to disable every update notice or delivery route.
Turn off automatic system-update downloads

Open Settings and tap Software update. On some models or carrier configurations, the menu may be called System updates. If you cannot find it, search Settings for “Software update.”

Turn off Auto download over Wi-Fi.

When you want to install an available update, return to the software-update screen and check for or start the update manually. Exact labels and controls vary by model, software version, and wireless service provider. Samsung’s update instructions describe the Wi-Fi download toggle and manual updating.

What this setting does—and does not do
Auto download over Wi-Fi is the ordinary Samsung-documented control for automatic system-update downloads over Wi-Fi. Samsung does not describe turning it off as a way to permanently block every update prompt or every possible update channel. Treat it as a way to require manual action for the downloads covered by that setting, not as a guarantee that the device will never notify you about updates.

If the setting is missing, the menu label or available controls may differ on your device. Check its model, software version, and carrier configuration; Settings search can help locate the update page.
Stop Play Store apps from auto-updating separately
Changing the system-update setting does not change how Google Play updates apps. To stop automatic app updates from Google Play, use:

Open the Play Store and tap your profile icon.

Tap Settings > Network preferences > Auto-update apps.

Select Don’t auto-update apps.
This is a separate control documented by Samsung’s app-update guide. It applies to Play Store app updates, not Galaxy system software.

Auto Blocker is not a way to stop normal updates
Do not turn on Auto Blocker for the purpose of blocking standard Samsung system updates. Samsung describes it as blocking software updates through a USB cable and unofficial software; official updates through the device’s Settings or Smart Switch are not affected. Samsung’s Auto Blocker guidance explains its scope.
Choose when to install, but account for the trade-off
Turning off automatic Wi-Fi downloads gives you more control over when to begin an update. The trade-off is that delaying installation may also delay security improvements and bug fixes. Samsung recommends updating when a new version is available. The company also notes that during installation the device cannot be used, files are inaccessible, and emergency calls cannot be made; choose a time when that interruption is acceptable. Check what an update includes
Update changes can differ by device model, country, and service provider. Review the update information shown on your own device rather than assuming another Galaxy model will receive identical changes. Samsung describes these differences in its software-update guidance.
