To package homebrew in stainless steel without losing carbonation, first confirm that the exact bottle and closure are rated for carbonated beverages. For beer that is already carbonated, fill under pressure with a counter-pressure bottle filler. For bottle conditioning, add a carefully calculated amount of priming sugar only after fermentation is complete, then allow the sealed bottles time to carbonate.

First, check whether the bottle is pressure-rated

Stainless steel alone does not make a bottle safe for carbonated beer. Pressure tolerance depends on the particular bottle, cap and closure. Find the manufacturer’s published operating-pressure rating and confirm that the product is intended for carbonated beverages. If the rating or intended use is not stated, choose a package explicitly designed and rated for carbonation instead of assuming a stainless water bottle or growler will work.

Do not transfer a rating from another stainless-steel vessel. For example, Ss Brewtech lists a 15 psi operating pressure for its 10-gallon 304 stainless brite tank; that figure applies to that tank, not to individual bottles. Ss Brewtech’s product listing describes a carbonation vessel, not a bottle.

Choose the method that matches your beer

Method Where carbonation comes from Main controls Most relevant equipment
Bottle conditioning Yeast ferments priming sugar added before sealing. Complete fermentation, accurate priming calculation and mixing, and a pressure-rated package. Rated bottles, priming sugar and sanitized bottling equipment.
Counter-pressure filling The beer is carbonated before filling; pressure is maintained during transfer. Compatible equipment and bottle, with filling performed under pressure. A counter-pressure bottle filler.

These approaches solve different problems: conditioning creates carbonation in the package, while counter-pressure filling helps retain carbonation the beer already has.

How to bottle-condition homebrew in stainless steel

  1. Confirm fermentation is finished. Do not package beer that may still be fermenting. Continued fermentation after sealing can create additional carbon dioxide and raise package pressure.
  2. Calculate the priming sugar. Base the amount on the beer volume and your desired carbonation, rather than using a universal dose. The required addition can vary with the target and the beer’s existing dissolved CO₂.
  3. Measure and distribute it consistently. Follow a reliable calculation and bottling procedure so the sugar is measured accurately and mixed evenly through the batch. The American Homebrewers Association’s bottling tutorial covers sanitizing equipment and calculating priming sugar.
  4. Sanitize the bottling equipment and package. Use a suitable sanitation procedure before transferring beer or adding priming sugar.
  5. Fill, close and condition. Seal the rated bottles and give the yeast time to ferment the priming sugar. The American Homebrewers Association notes that two weeks may still be early and that conditioning for up to about a month may help the beer reach its full carbonation potential; timing varies with the beer and conditions. See its guide to bottle conditioning.

Why the sugar calculation matters

Priming sugar is fermentable material: yeast consumes it in the sealed package and produces CO₂. Too much sugar, uneven distribution or fermentation that was not complete can lead to excess pressure as well as carbonation that misses the target.

Mark Hibberd’s 1995 primer uses 2.4 volumes of CO₂ as an illustrative target and gives 6 g/L sucrose as the example addition for its stated calculation. Those figures are not universal instructions: the correct dose depends on the beer and the desired carbonation. The primer also explains the “volumes of CO₂” measure and why relatively small dosing differences can noticeably affect carbonation. Read “A Primer on Priming.”

How to fill beer that is already carbonated

Use a counter-pressure bottle filler. It pressurizes the bottle while carbonated beer flows in, reducing the pressure difference that can make CO₂ break out of the beer and cause foaming. The Bosa Grape listing for its stainless-steel counter-pressure filler with pressure-relief valve describes this pressure-assisted filling approach. Check the filler’s listing and instructions for equipment-specific operation and compatibility.

  1. Verify that both the bottle and its closure are rated for the pressure involved, and that the filler is compatible with them.
  2. Follow the filler manufacturer’s directions for setup, pressure and operation; keep the beer and equipment within the conditions specified by those instructions.
  3. Pressurize the bottle as directed, then transfer the beer under pressure. Avoid an open, unpressurized pour when retaining carbonation is the goal.
  4. Close the bottle promptly using the procedure appropriate to the filler and closure.

A counter-pressure filler is for packaging beer that is already carbonated; it is not required for ordinary bottle conditioning. The cited vendor describes pressure during filling as the mechanism that minimizes CO₂ loss, not as a guarantee that every setup will eliminate foaming.

Prevent excessive package pressure

Carbonation means pressure in a sealed package, so package selection and fermentation control are safety requirements, not just quality details. The Brewers Association’s February 1, 2026 guidance identifies package pressure, pressure limitations and fermentation completion as controls against over-pressurization. It warns that unintended refermentation in a package can cause it to rupture. Its practical message is direct: “It is the brewer’s responsibility to prevent package over-pressurization—not the customer’s!” Read the Brewers Association guidance.

The conical bottom design is conducive to sediment accumulation and fermentation, with yeast slurry valves and beer valves for easy discharge of yeast sludge and bottled beer.
  • Use only a bottle and closure whose pressure rating and intended use are established by the manufacturer.
  • Do not package until fermentation is complete.
  • Measure priming sugar for the actual beer volume and carbonation target; do not guess or add an unmeasured extra amount.
  • Do not infer a safe pressure limit for an unrated bottle from a stainless tank, another bottle or the material alone.
