MyZubster’s kefir project proposes a way to turn household know-how into records people can inspect, compare, and build on—without treating a personal account as scientific proof. Its central idea is to preserve who reported a practice, what was actually observed, what remains unknown, and what evidence supports each claim.
Why use kefir to explore community knowledge?
Daniel Ioni describes making and reusing milk kefir in home cooking as the starting point for a broader knowledge-system concept. The kefir work is presented as a pilot domain for exploring how practical knowledge can be structured and reused; it is not an independently validated platform, recipe, or food-safety standard. The MyZubster repository describes the project as an MVP in active development and validation, which does not establish deployment, adoption, or partnerships (MyZubster-Ecosystem on GitHub).
The distinction matters because community records can be useful without proving that a method is safe or effective. Ioni’s stated design principle is: “Do not manufacture certainty. Preserve provenance, record observations, expose unknowns, and let evidence accumulate.”

The model assigns evidence states so a reader can tell what kind of claim a card contains. A contributor’s report, an observed result, and reviewed guidance are not interchangeable.

Different claims need different support. A contributor’s account can establish who says they performed a step. A documented reproduction can record what happened in that attempt. A claim about how long food can be kept safely requires appropriate food-safety evidence, not simply repeated anecdotes.
What goes into a Knowledge Card?
The early design uses Markdown files with stable identifiers such as KF-001. Ioni presents Markdown as an inspectable starting point, with Git history offering an initial record of changes. A database or graph model is discussed as a possible future evolution, not a completed deployment.

A proposed card can include:
- Contributor and evidence state
- Culture input, ingredients, equipment, and procedure
- Process conditions, results, and outputs
- Media, reproductions, sources, and safety boundary
- A next-iteration note
These fields make records easier to review while preserving the limits of the underlying account. For example, descriptions of straining kefir, separating a thicker fraction from whey, or reusing outputs are personal-practice examples in the project account—not independently verified food-safety instructions.
How does the workflow preserve unknowns and history?
The proposed workflow separates transcription and organization from interpretation. It is designed to make a submission reusable without silently filling gaps or rewriting what earlier contributors said.

- Preserve the raw submission.
- Normalize its wording without adding facts.
- Mark missing details as UNKNOWN rather than guessing.
- Check completeness and assign a stable identifier.
- Render the Knowledge Card and add it to the library.
- Record later reproductions as separate attempts linked to the original card, retaining differences and results.
- Attach external evidence separately, without upgrading unrelated claims automatically.
If a contributor says “a few days” or “in the refrigerator,” the proposed record keeps that wording or marks a missing measurement as UNKNOWN; it does not convert it into an exact duration or temperature. A later reproduction adds another observation while leaving the original account intact.
What does the pilot track beyond the recipe?
The project also proposes tracking how culture and knowledge move through a community. Its described statuses include interest, request, culture received, guide used, recipe tried, and feedback recorded. These are observable states to document, not proof that a step occurred: a status should be treated as complete only when there is evidence for it.

Published and project-level examples show different ways to document fermentation and culture sharing. They provide context for the problem, but neither validates MyZubster’s architecture or its food-safety claims.

What the MyZubster account does not establish
Ioni’s article is an account of the project’s own design. The available descriptions do not establish successful pilot outcomes, independent food-safety validation, adoption metrics, or a current institutional partnership. The project is best understood as a proposed evidence-aware method for organizing community knowledge—not as proof that any particular kefir procedure is safe or effective.
