Carmine and cochineal extract are insect-derived red color additives. In the U.S., when either is present in a food, the ingredient list must name it as “carmine” or “cochineal extract.” Dairy foods, drinks, gelatins, puddings, and confections are useful categories to check—but a product’s category alone does not confirm it contains carmine. Check the current label on the exact item.

What names to look for on a label

On U.S. food labels, look for the words carmine or cochineal extract. FDA guidance says the additive must be declared by its common or usual name when present, including in foods such as butter, cheese, and ice cream. The agency’s April 2009 Small Entity Compliance Guide describes the requirement under 21 CFR 73.100(d)(2); it states an effective date of January 5, 2011.

E120 is another useful term to recognize: FDA’s color-additive summary associates it with both cochineal extract and carmine. These names are related identification terms, but naming conventions and permissions can vary by jurisdiction. The sources cited here address U.S. FDA rules.

Food categories worth checking

FDA identifies several broad categories where color additives may be used. They can help narrow where to look, but they are not a list of products known to contain carmine, and they do not establish how often it is used.

TruColor Natural Liquid Baking Color, 1 Ounce Carmine Red
  • Net weight 1 ounce / 28.3 grams
  • Contains water, beta carotene, carmine, cultured corn glucose, sugar and vegetable gum -- note: carmine is a NON-kosher ingredient
  • Try the color in a small amount in your individual application to find what works best
  • One way to avoid using too much is to test the baking color on surfaces by airbrushing
  • Applying natural color to a dry surface you rarely rarely requires checking degree of pH, heat stability or other variables
  • Dairy: butter, cheese, ice cream, and other dairy products.
  • Drinks: beverages.
  • Desserts: gelatins and puddings.
  • Sweet foods: confections and cereal.

FDA specifically uses butter, cheese, and ice cream as examples of foods requiring the named declaration when carmine or cochineal extract is present. For the other categories, its consumer information describes possible use of color additives generally; it does not establish that carmine is present in every category—or in any particular brand or item. See the agency’s consumer information on color additives, then verify the exact product’s ingredient list.

Cosmetics and other products

FDA’s color-additive summary lists carmine for cosmetics generally, including use around the eyes. Cosmetics containing carmine are subject to applicable labeling requirements. For some cosmetics not covered by the ordinary ingredient-declaration provision, FDA says the presence must be stated prominently and conspicuously at least once. Check the package rather than assuming that a particular cosmetic contains it.

Why the ingredient is named

FDA says carmine and cochineal extract must be identified by name on food labels because some people may have allergic reactions. Its cited guidance does not quantify how common reactions are. If you have a known sensitivity, use the label and consult a qualified clinician for personal advice.

How to check a specific product

  1. Read the ingredient statement on the package you plan to buy.
  2. Look for “carmine” or “cochineal extract.” Treat “E120” as a related term that may help with identification, while bearing in mind that labeling conventions differ across jurisdictions.
  3. For cosmetics, check the package’s ingredient information and any other applicable label statement.
  4. Recheck when buying again: formulations can change, so an older label or an assumption based on the product category is not confirmation of the current formula.

What is not established

The FDA sources cited here do not provide a prevalence figure for carmine in foods or cosmetics, or rank product categories by how frequently they use it. A category is a place to inspect, not proof of an ingredient. Product-specific confirmation comes from the current label.

For the governing U.S. requirement, consult 21 CFR 73.100; FDA guidance explains the agency’s labeling position but is not a substitute for the regulation.
