Not quite. The cucumber-like flavor clue comes from fruit of Solanum pennellii, a wild relative of the tomato—not evidence that cultivated tomatoes once tasted like cucumbers. A 2007 account says the wild species contains C9 aldehydes associated with cucumber-like flavor and that these compounds are absent in cultivated tomato. It does not establish a past cucumber-flavored stage in the history of ordinary tomatoes.

Where the cucumber comparison comes from

The headline traces to a 2007 Chemistry World article summarized by the UC Davis Tomato Genetics Resource Center (TGRC). The TGRC summary describes C9 aldehydes in fruit of Solanum pennellii, a wild tomato relative, and associates that class of volatile compounds with cucumber-like flavor. It says the compounds are absent in cultivated tomato. The TGRC page is dated April 25, 2007, and was updated March 2, 2023.

That is a comparison between related plants and their fruit chemistry, not a record of cultivated tomatoes changing from cucumber flavor to tomato flavor. The summary identifies the compounds only as C9 aldehydes; it does not name individual aldehydes or give their amounts. It also does not establish a sensory-testing method or details of the experiment, so the claim should stay at the level the summary supports.

Does this mean modern tomatoes lost flavor?

There is a separate, better-supported concern: flavor has been affected by breeding priorities in cultivated tomatoes. A 2017 research record describes modern commercial varieties as substantially less flavorful than heirlooms and presents chemical-genetic information that could help breeders recover desirable traits. That is a broad comparison, not a rule that every heirloom tastes better than every commercial tomato. Yield, disease resistance, appearance, and shelf life have also been important breeding goals. This breeding story does not show that cultivated tomatoes once had cucumber flavor. Nor does it mean that all modern tomatoes taste alike or that flavor can be explained by one missing compound.

Why tomato flavor is more than one aroma

Tomato flavor emerges from a combination of sugars, acids, and volatile aroma compounds. Volatiles help create recognizable notes, but no single volatile defines the whole flavor. A University of Florida report in 2022 described a biochemical pathway involving five nitrogen-containing compounds associated with tomato aroma and discussed how that knowledge could inform breeding. Denise Tieman, a research assistant professor of horticultural sciences, said: “Now that we know how these compounds are made in tomatoes, we can identify varieties that have the heirloom version of the enzyme and high levels of these flavor compounds, and we can breed this trait into modern tomatoes to improve flavor.” The University of Florida report concerns a different set of compounds from the C9 aldehydes in the cucumber comparison.

What newer tomato genetics adds

A University of Georgia report published September 24, 2026, summarizes a study that examined 558 tomato varieties and wild relatives. The study reported 337 significant genetic associations tied to sugars, acids, and flavor compounds, and identified Sl-LIP100 as one gene involved in producing compounds associated with fresh, green, and fruity notes. Those findings offer context for the complexity of flavor and potential breeding routes; they are not the same discovery as the cucumber-associated C9 aldehydes.

Esther van der Knaap, a professor in the University of Georgia’s College of Agricultural and Environmental Sciences and Department of Horticulture, noted: “What may be good tasting to humans may not be relevant in wild relatives.” She also said, “Flavor is extremely complex. This gene, the Sl-LIP100, is only one part of a huge puzzle.” The UGA report describes the 2026 study.

Can growing heirloom tomatoes recreate that taste?

Growing heirlooms can be a way to explore tomato flavor, but it will not recreate the cucumber-like compounds attributed to S. pennellii. Heirloom tomatoes vary widely in flavor and growing performance. UC Agriculture and Natural Resources notes that open-pollinated seeds can produce offspring like the parent when cross-pollination is prevented, while heirlooms may be less reliable or disease resistant than hybrids. Choose varieties for the flavor profile and growing conditions you want, as well as their reliability and disease resistance. UCANR’s heirloom tomato guide explains these trade-offs.
