Yes—but only in a stainless steel vessel whose manufacturer specifically approves it for carbonated beer and documents a pressure rating suitable for the carbonation method. Steel alone does not make a bottle safe to seal under pressure. Check the exact model’s rating, closure, fill limit, and pressure-relief instructions before use.
What makes a stainless steel bottle safe for carbonated beer?
The deciding factor is the complete vessel—the bottle, closure, fittings, and any regulator—not its material. The Brewers Association advises using only growler containers designed for packaged carbonated beer and verifying with the supplier that the pressure rating is at least as high as the pressure the beer will reach. Do not assume an ordinary stainless bottle, insulated bottle, retail growler, or soda-maker bottle can safely contain carbonated beer. Use only the manufacturer’s approved closure and fittings, follow its fill line and relief instructions, and do not improvise a sealed pressure vessel.

Natural conditioning
In natural conditioning, fermentable sugar produces CO₂ inside the sealed vessel. The vessel must be approved for the pressure that the process can generate, and the amount of fermentable sugar and any remaining fermentation must be controlled. The safe priming amount depends on details such as batch volume, residual CO₂, beer style, and fermentation; the growler safety guidance is not a complete homebrew priming-sugar recipe.

Force carbonation
Force carbonation introduces CO₂ from a regulated gas source. Use a pressure-rated vessel and follow its instructions for the regulator, pressure, and temperature. There is no single PSI setting that is appropriate for every beer or steel growler.
How should you fill and store a carbonated growler?
- Leave the headspace specified by the manufacturer or fill to its marked line. If neither is given, the Brewers Association recommends 5% headspace.
- Keep filled growlers cold and dark. Do not let them warm or freeze; temperature changes can increase pressure or damage the container.
- Do not overfill, exceed the vessel’s pressure rating, or ignore pressure-relief instructions.
The pressure can rise substantially as a filled vessel warms. In a scenario calculated in the Brewers Association’s 2019 Draught Beer Quality Manual—a growler filled to 99%, with beer at 38°F containing 2.5 volumes of CO₂, then sealed—the examples are 29 psi at 68°F and 52 psi at 90°F. These are scenario-specific figures, not general pressure ratings or target settings.

What equipment can work—and what should not be assumed?
Pressure-rated growlers and mini kegs
Purpose-built pressurized growlers and mini kegs can hold beer under pressure and use CO₂ to maintain or adjust carbonation. For example, GrowlerWerks describes its uKeg 64 as a double-wall, vacuum-insulated stainless steel growler with a pressure-regulating cap and selectable carbonation level (manufacturer product page). That description applies to that model, not to steel growlers generally.
Craft Master describes its pressurized growler as 304 stainless steel, with an integrated CO₂ regulator cap, pressure gauge, safety valve, and pressure-release tap (manufacturer product page). These are manufacturer-listed features, not independent performance tests. Check the current documentation for the exact model and its operating limits.

Carbonation caps
A carbonation cap can feed CO₂ through a compatible bottle connection. Kegco describes a cap that connects to a gas-side ball-lock disconnect and recommends chilling the beverage to help CO₂ dissolve (manufacturer product page). A cap’s availability does not establish that a particular steel bottle has compatible threads, fittings, or a suitable pressure rating. Verify all three before connecting gas.
Soda-maker bottles
A metal carbonation bottle made for a soda machine is a model-specific appliance accessory, not automatically a beer growler. SodaStream’s instructions specify adding water to a marked fill line, warn against removing the bottle during carbonation or using a damaged bottle, and identify compatible machines (SodaStream instructions). Those instructions do not approve the bottle for beer.

What to verify before buying or using one
Check the documentation for the exact model, rather than relying on a product category or material description. Confirm:

- The documented maximum working pressure and intended carbonation range.
- Whether it has a pressure-relief feature and how that feature is meant to be used.
- Which closure, regulator, and fittings are compatible.
- The marked fill line or required headspace.
- How to clean the vessel, whether seals are replaceable, and the manufacturer’s temperature and maintenance instructions.
The sources cited here do not establish one pressure rating or carbonation setting that is right for every vessel and beer. If the manufacturer does not document the vessel’s suitability and pressure limit for carbonated beer, do not seal beer in it under pressure.
