Use a baking sheet for ordinary baking and foods that need a broad, flat surface. Use a broiler pan when broiling food under direct heat: its raised rack holds food above a lower pan that catches drippings. For some broiling, a suitable rimmed metal baking sheet with an oven-safe rack can substitute—but only if both pieces and your oven’s instructions permit it.
What is the difference between a broiler pan and a baking sheet?
A typical broiler pan has two parts: a slotted or wire rack above a lower drip pan. Food sits on the rack, away from the juices and fat that collect below. The openings let heat circulate around the food. Maytag explains that this design keeps food out of its juices and allows air to circulate, which can help with crisping. KitchenAid says its broiler pan and grid are designed to drain juices and help avoid spatter and smoke.
A baking sheet is a broad, relatively flat pan for baking. A rimmed sheet can also catch liquid, but it does not elevate food by itself; that requires a separate rack. The distinction is the setup, not simply the name on the pan: elevation and drainage are built into a broiler pan, while a baking sheet is primarily a flat baking surface.

Can you use a baking sheet instead of a broiler pan?
Sometimes. Maytag recommends an oven-safe cooling or roasting rack on a standard metal baking sheet or sheet pan, preferably one with raised edges. Whirlpool describes a similar sturdy metal-pan-and-rack alternative. The rack lifts food above the drippings, while the rimmed pan catches them.
Before using this arrangement, check the oven’s Use and Care Guide and confirm that both the sheet and rack are suitable for broiling. Do not assume every baking sheet, cooling rack, or nonstick coating is rated for intense broiler heat. If the manual calls for a particular pan or restricts cookware size, follow that guidance.

When is a baking sheet the better choice?
Choose a baking sheet for cookies and other ordinary baking where the recipe calls for a flat surface. A broiler pan’s raised rack and drip-pan arrangement is designed around broiling rather than routine baking. A rimmed baking sheet is also useful when you want to collect juices without raising the food above them.
How should you use a broiler pan?
- Check your oven manual. Follow its directions for broil settings, cookware, rack position, and whether the door should be open or closed. These instructions vary by oven model.
- Use the recommended pan or a permitted alternative. A broiler pan with its rack or grid is the straightforward choice when supplied and allowed. If using a sheet-and-rack setup, confirm both pieces are broiler-safe and fit the oven as directed.
- Choose the rack position for your oven and food. KitchenAid advises experimenting with rack positions; do not treat one position as universal.
- Handle drippings as the manual directs. KitchenAid notes that drippings left in a heated oven can bake onto the pan. Remove the pan after cooking if your oven instructions call for it.
- Check restrictions on foil and storage. Wolf says not to put foil on its broiler pan because it can melt and adhere. Wolf also cautions that storing its pan in the oven can impair airflow during regular cooking. These are brand-specific instructions, so check the directions for your own oven and pan rather than transferring them to every model.
Why does broiler guidance vary by oven?
Broil temperatures, door behavior, rack positions, and approved cookware depend on the appliance. As general guidance—not a universal standard—Maytag says ovens with a single broil setting typically use 500°F to 550°F; on ovens with levels, it lists low as usually 400°F, medium 450°F, and high 500°F to 550°F. Maytag also says ovens vary, so use the settings and technique in your specific oven’s manual.

Material matters, too. Whirlpool warns that glass cookware can crack or shatter under intense broiler heat. Do not substitute glass or an unrated pan or rack for cookware the manual permits.

Confirm the replacement fits your appliance and includes the pieces you need. Some models use a separate drip tray, so a rack alone may not be enough. For example, Bosch lists broiler pan 00666710 as suitable for broil and convection broil, measuring 12.4 × 8.6 inches, and directs customers to order tray part 00666709 to catch drippings. Check the documentation for your own model before ordering; dimensions and part compatibility are not interchangeable across ovens.
