There is no proven, universal winner among stainless steel, aluminum, and porcelain-coated steel broiler pans. Choose by checking whether the pan fits your oven, how its rack and tray are built, its stated broiler rating, and its care instructions—not by material name alone.
How to choose a broiler pan material
Start with your oven manual and the exact pan dimensions. Then compare the complete construction: a two-piece pan may pair a tray with a wire, slotted, or ribbed rack, and those parts may use different materials. Confirm the product’s oven or broiler rating and cleaning directions before buying or using it.
- Fit: Measure the available oven space and check whether your appliance maker specifies a replacement pan.
- Construction: Check the tray and rack separately; “stainless steel,” “aluminum,” or “porcelain-coated” may not describe every component.
- Use limits: Follow the product rating and appliance manual. A material label alone does not establish a safe maximum temperature or compatibility with a burner.
- Care: Confirm dishwasher, abrasive-cleaner, acidic-food, and foil guidance for the specific model.
The available product information documents all three material categories, but does not provide controlled, head-to-head testing of performance, warping, corrosion, chipping, or service life. Manufacturer descriptions of heat distribution or enamel benefits are product claims, not independent comparative results.

| Material and example | Construction and stated specifications | Care or use guidance |
|---|---|---|
| Stainless steel: Sur La Table two-piece broiler pan | Listed as 18/0 stainless steel, with a broiling grate and bottom tray. Available in 9 × 12-inch and 12 × 16-inch sizes, according to the retailer listing: Sur La Table product listing. | The listing says this product is dishwasher safe and intended to withstand broiling temperatures. It does not establish the rating or care requirements of other stainless-steel pans. |
| Aluminum: Nordic Ware Naturals Classic Broiler Pan | An uncoated aluminum, two-piece set with a ribbed/slotted rack and drip pan. The product listing gives interior dimensions of 12.8 × 8.4 inches and an oven rating of 500°F / 260°C: Nordic Ware product listing. | Nordic Ware recommends hand washing. Dishwasher detergent may discolor this model; the manufacturer describes that discoloration as cosmetic. Prolonged contact with acidic foods such as vinegar or tomato products may darken, pit, or corrode its aluminum. |
| Porcelain-coated steel: Wolf broiler pans | Wolf describes the pan as porcelain-coated steel. Current models use a wire upper rack; older models used a slotted porcelain rack. The wire rack is nickel-plated steel: Wolf product information. | Wolf’s care and use restrictions are model-specific; see its cleaning instructions and product information. |
Stainless steel: check the exact product rating
The cited Sur La Table pan is a two-piece example with a stainless-steel grate and tray. Its listing says it is dishwasher safe and suitable for broiling temperatures, but the cited information does not specify a numeric temperature rating. Do not assume another stainless-steel pan shares its construction, rating, or dishwasher guidance.

- VERSATILE BROILING & ROASTING: Ideal for broiling steaks, pork chops, chicken breasts, fish fillets, bacon, and ribs, or roasting large portions of vegetables and appetizers with minimal mess.
- EASY CLEANUP & RECTANGULAR DESIGN: Smooth stainless steel surfaces resist baked-on grease for easy cleaning; fits standard home ovens and keeps your oven interior protected from splatter.
Aluminum: follow the manufacturer’s cleaning and food guidance
Nordic Ware describes its Naturals Classic model as distributing heat well. That is the manufacturer’s claim, not evidence that aluminum broiler pans outperform stainless steel or porcelain-coated steel overall. For this particular pan, the stated 500°F / 260°C oven rating and 12.8 × 8.4-inch interior dimensions are product specifications, not a comparison with other materials.
Nordic Ware recommends hand washing and warns that prolonged exposure to acidic ingredients can damage or darken the aluminum. Follow the product’s full instructions, including its ventilation guidance and instruction not to leave broiling food unattended.

Porcelain-coated steel: pan and rack materials may differ
“Porcelain-coated” can describe the pan body without describing its rack. Wolf’s current pans have a wire rack made of nickel-plated steel, while older versions used a slotted porcelain rack. Check the specific model rather than assuming that every component has the same finish.

Wolf says to let its porcelain-coated parts cool, then hand wash them with hot water and mild detergent. It says not to put its pan or rack in the dishwasher, not to use aluminum foil on the pan because foil can melt and adhere, and not to use the broiler pan on surface burners or induction cooking surfaces. These directions apply to Wolf products; they should not be generalized to every porcelain-enamel pan.

- Sturdy stainless-steel broiling pans withstand the high temperatures of broiling and clean up in the dishwasher
- Bottom trays can be used separately for roasting or baking

Capron Manufacturing describes porcelain enamel as a smooth surface that does not require seasoning. Those are the manufacturer’s stated benefits, not independent findings about comparative nonstick performance or lifespan: Capron Manufacturing.

- Check the appliance manual. Look for required dimensions, model-specific replacement guidance, and restrictions on where the pan may be used.
- Measure the oven space. Compare the pan’s listed dimensions with the available cavity space; do not rely on a broad material description to establish fit.
- Inspect the rack and tray details. Confirm whether the set is two-piece and whether the rack is wire, slotted, or ribbed. Wolf’s documented rack variations show why the pan label alone may not describe the whole set.
- Confirm temperature and cleaning instructions. Use the exact product’s oven or broiler rating, dishwasher guidance, and restrictions on foil, abrasives, or acidic foods.
- Use appliance-specific restrictions. For example, Wolf says its broiler pan is not for surface burners or induction cooking surfaces; that restriction is not evidence of the same limitation for every broiler pan.
