The closest affordable alternative to a steam oven is a lidded pot with a perforated steamer basket. It cooks food with moist heat without needing a specialist appliance. For quick small portions, use a microwave-safe covered dish or steamer; choose a pressure cooker for foods such as beans and stews. Air fryers and ovens are better when you want browned or crisp surfaces—they use dry heat, not steam. No appliance is automatically healthiest: the food, added salt and fat, and cooking method all matter.
How to choose an alternative
Start with the result you want. Steam ovens use moist heat, which helps keep food tender; they do not provide the dry, browned crust that roasting or air frying can produce. If your priority is steaming, use a basket and pot or a covered microwave-safe dish. If you want crispness or browning, consider an air fryer or oven instead.
Health Canada describes steaming as a method that can be done with a stovetop basket or in a microwave. The American Heart Association also includes a range of techniques—from baking and roasting to poaching, steaming, and stir-frying—among cooking options. The useful comparison is the recipe and result: consider added oil and salt, cooking time, texture, convenience, and the amount you need to prepare, rather than assuming one appliance is always best.

| Method | Best for | Cooking result | Trade-offs |
|---|---|---|---|
| Stovetop steamer basket | Vegetables, fish, and shellfish | Moist, tender food | Needs a pot, lid, and water; does not brown food. Health Canada identifies a stovetop steaming basket as a way to steam. Health Canada. |
| Microwave steamer or covered microwave-safe dish | Fast cooking for small portions and reheating | Moist cooking, without oven-style browning | Heating can be uneven; cookware must be microwave-safe, and covered dishes should be vented. Health Canada describes microwave steaming; USDA provides microwave safety guidance. Health Canada; USDA. |
| Pressure cooker | Beans, rice, soups, stocks, and stews | Moist cooking in an enclosed pot | Not suited to crisp surfaces. Health Canada lists these foods among common pressure-cooker uses. Health Canada. |
| Air fryer | Small batches when you want browned or crisp food | Dry, circulating hot air | It is not a steam substitute, and capacity depends on the model. The British Heart Foundation says air fryers cook 20 to 25 per cent faster than a fan oven; this is a cooking-time comparison, not a health or nutrient-retention result. | Convection or conventional oven | Baking and roasting larger portions | Dry heat that can brown food | May take longer for some meals, including preheating; food can dry out if cooked too long. |
| Sautéing, braising, or poaching | Stovetop dishes cooked with oil or liquid | Varies with the technique and recipe | Requires attention; the amount of oil or liquid and the final texture depend on the recipe. The American Heart Association lists these among cooking techniques. American Heart Association. |
The closest substitute: steam on the stovetop
Place a perforated steamer basket over a small amount of water in a pot, add the food, and cover. Keep the food above the water rather than submerged, and cook until it reaches the tenderness you want. This setup is simple and works for foods such as vegetables, fish, or shellfish; it will not brown the surface.

Use a microwave for quick moist cooking
A microwave can steam vegetables in a microwave-safe steamer or a covered, microwave-safe dish. The FDA says, “Microwave cooking does not reduce the nutritional value of foods any more than conventional cooking.” It adds that microwave-cooked foods may retain more vitamins and minerals when cooking is quicker and no water is added. That is a qualitative explanation, not a universal ranking: nutrient outcomes depend on the food and cooking conditions. FDA.

- Arrange food evenly; stir, rotate, or turn it when appropriate.
- Vent covered dishes so steam can escape, and allow the standing time called for in the recipe or instructions.
- For meat and poultry, check the internal temperature with an instant-read thermometer rather than relying on appearance alone.

Choose pressure cooking for moist meals, not crispness
A pressure cooker is useful when your usual meals include beans, rice, soups, stocks, or stews—the kinds of foods Health Canada lists as common uses. It offers a different route to moist cooking, but it is not a replacement for a steam oven when your goal is a browned top or crisp exterior.

Air fryer
An air fryer uses dry convection heat, so it is a better match for crisp or browned results than for steam-oven tenderness. The British Heart Foundation reports that air fryers cook 20 to 25 per cent faster than a fan oven, but that speed figure does not show that air-fried food is healthier or retains more nutrients. Nutrition depends on what you cook and how much salt, oil, or other ingredients you add.

Convection or conventional oven
An oven is useful for roasting or baking larger portions and can brown food in a way a steamer cannot. It may require preheating and can dry food if cooking continues too long. Choose it when surface color or batch size matters more than the moist texture associated with steaming.

There is no established universal health ranking for these appliances. The American Heart Association’s guidance spans many methods, including baking, blanching, braising, grilling, poaching, roasting, sautéing, steaming, and stir-frying. In practice, compare the ingredients and technique: how much salt or added fat the recipe uses, how long the food cooks, and whether you want a moist or crisp result. The available guidance does not establish a cross-appliance nutrient-retention percentage.
Quick Recap
A quick decision guide
- Want vegetables or fish cooked with moist heat? Use a stovetop steamer basket or microwave steamer.
- Need a quick small portion? Use a microwave-safe covered dish, taking care to address uneven heating.
- Often cook beans, soups, rice, or stews? A pressure cooker suits those moist meals.
- Want a crisp or browned surface? Use an air fryer or oven, recognizing that these are dry-heat methods.
- Want to reduce added fat or salt? Check the recipe and seasoning; the appliance name alone does not determine the result.
