The simplest way to make bubble tea at home is to combine strong tea with cooked tapioca pearls and sweetener, then add milk or cream if you like. For the least work, use dried or ready-to-use pearls and follow their exact directions; making pearls from scratch is possible, but it adds dough preparation and hand-shaping.

Choose a method before you start

Bubble tea, also called boba or pearl milk tea, is a mix-and-match drink rather than one fixed formula. Its usual parts are tea, tapioca pearls and sweetener; milk or cream and ice are optional. Black tea is common in the cited recipes, while green tea is another option. Neither is established as the universal best choice.

Choice What to expect
Purchased dried pearls Less hands-on work, but cooking times and soaking instructions vary by product. Follow its package directions.
Pearls made from scratch A dough-making project with hands-on shaping. The Washington Post recipe lists about two hours total.
Milk or cream Optional. Recipes use milk, cream, half-and-half or condensed milk; adjust sweetness to taste.
Cold or hot tea Chilled tea and ice make a cold drink. The Washington Post scratch recipe also allows hot tea.

Make the easy version with purchased pearls

Use the directions for the specific pearls you bought. Size and format matter: one recipe’s dried black pearls are simmered and rested, while another recipe calls for an overnight soak. Do not combine timings from different recipes or substitute one product’s instructions for another’s.

  1. Brew the tea. Make it stronger than you would for sipping plain, since it will be diluted by ice and optional milk. For a cold drink, brew it ahead and chill it.
  2. Prepare the pearls. Cook or soak them exactly as their package or chosen recipe directs. Drain as directed and sweeten with syrup if desired.
  3. Assemble the drink. Add pearls to a glass, pour in tea, and add milk, cream or a suitable alternative if you want it. Add syrup to taste.
  4. Serve. Add ice for a cold drink. A wide straw is optional and can make sipping pearls easier.

Two recipes, two different pearl methods

Tetley India’s two-serving recipe uses four tea bags, ½ cup dried black tapioca pearls and syrup made with ½ cup sugar and ½ cup water; milk is optional. It brews the tea for three minutes and directs readers to simmer the pearls for 15–18 minutes, then let them stand for 15 minutes. Cuisinart’s two-serving recipe instead calls for dried large pearl tapioca soaked overnight. It steeps black tea for three to five minutes and serves each 10-ounce glass with ¼ cup pearls, ¼ cup syrup and ¼ cup half-and-half. The recipe lists 320 calories per serving for its specific formula; that figure does not apply to other bubble tea recipes. See Cuisinart’s bubble tea recipe.

Make tapioca pearls from scratch

The Washington Post’s scratch recipe yields roughly 110–120 pearls for five to six servings and takes about two hours total. It is a separate, more hands-on route: you make a dough from tapioca flour, brown sugar and water, shape it into small balls, then boil and soak them in syrup.

  1. Make the dough. Bring brown sugar and water to a rolling boil. Stir in part of the tapioca flour to form a sticky paste, then mix in the remaining flour.
  2. Knead and shape. When the dough is cool enough to handle, knead it. Adjust with tiny additions of water or tapioca flour as needed. Roll it into narrow logs, cut small cubes, then roll the cubes into balls. Dust the work surface with tapioca flour to reduce sticking.
  3. Cook the pearls. Boil the balls until they float and turn translucent—about 10–12 minutes in this recipe. Drain and briefly rinse under cold running water.
  4. Soak before serving. Cover the pearls with chilled syrup and leave them for at least 30 minutes and up to two hours.

The Washington Post recipe suggests about 20 pearls per cup of strong tea. Add milk, cream, condensed milk or more syrup to taste; use hot or chilled tea. Prepare components ahead, with recipe-specific limits

For cold bubble tea, brewing the tea in advance means it can chill thoroughly before assembly. The Washington Post recipe says its tea can be brewed up to one day ahead and refrigerated, its syrup refrigerated for up to one week, and its uncooked formed pearls frozen for up to two weeks. These are instructions for that recipe, not universal storage guarantees.

Tetley India gives a different syrup note: its remaining simple syrup may be refrigerated in an airtight container for up to two weeks. That duration applies to its syrup formula. For cooked pearls, there is no single storage duration established across these recipes; make the amount you expect to serve and follow the product’s directions.

Handle ingredients safely

Use clean equipment and follow the package directions and local food-safety guidance for preparation and storage. Hong Kong’s Centre for Food Safety has a guideline specifically about producing iced milk tea with pearl tapioca, but no specific temperature or holding-time limit is cited here. Consult the Centre for Food Safety guideline and applicable local guidance rather than assuming a recipe’s storage notes are food-safety rules.
