You can make a four-pound Costco-inspired deli salad at home, but the exact formula used for Costco’s commercial deli tubs is not established by the available sources. This recipe is a home adaptation: creamy pasta salad with grapes, peas, herbs, and Parmesan, with a target finished weight of four pounds. The proportions below are an estimate, not a tested or official Costco recipe.

What “Costco-style” means for this recipe

Costco Connection’s September 2023 Creamy Pasta Salad with Grapes is the closest reference for this version. It combines pasta with mayonnaise-and-sour-cream dressing, grapes, peas, chives, dill, and Parmesan. The published recipe starts with 8 ounces of dry pasta and says it serves six to eight; it does not give a four-pound yield.

Costco’s Tuna Pasta Salad is a different style, with tuna, corn, bell peppers, red onion, mustard, and mayonnaise, plus optional paprika. “Costco-style deli salad” can therefore describe more than one flavor profile. The recipe below chooses the creamy grape-and-herb style rather than combining the two.

Estimated ingredients for a four-pound finished batch

The ingredient amounts below are starting estimates for a home adaptation, not Costco’s commercial proportions. They are intended to yield about four pounds after mixing; ingredient brands, draining, and produce moisture can change the final weight.

Mayonnaise 1 cup
Sour cream 1 cup
Fresh lemon juice 2 tablespoons
Finely grated lemon zest 1 tablespoon
Kosher salt 1½ teaspoons, then adjust to taste
Ground black pepper 1 teaspoon, then adjust to taste
Green grapes, halved 4 cups
Frozen baby peas, partially thawed 2 cups
Chives, chopped 2 tablespoons
Dill, chopped 2 tablespoons
Parmesan, shredded 1 cup

These amounts use the Costco Connection recipe’s ingredient choices as a flavor anchor, while increasing them as an estimate for a larger batch. The reference recipe’s original amounts are 8 ounces of pasta, ½ cup each of mayonnaise and sour cream, 1 tablespoon lemon juice, ½ tablespoon lemon zest, ¾ teaspoon salt, ½ teaspoon pepper, 2 cups grapes, 1 cup peas, 1 tablespoon each of chives and dill, and ½ cup Parmesan.

How to make and weigh the salad

  1. Cook the pasta. Boil it in salted water according to the package directions until just tender. Drain thoroughly, then spread it on a tray or large shallow dish so it cools faster. Do not mix hot pasta into the dressing.
  2. Prepare the dressing. In a large bowl, whisk together the mayonnaise, sour cream, lemon juice, zest, salt, and pepper.
  3. Combine the salad. Add the cooled pasta, grapes, peas, chives, dill, and Parmesan. Fold gently until the dressing coats the ingredients evenly.
  4. Chill before serving. Cover and refrigerate for about two hours, following the chilling time in Costco Connection’s reference recipe. The pasta may absorb some dressing as it rests; fold it again before serving.
  5. Check the finished weight. Weigh the chilled salad in a tared container or bowl. If it is below four pounds, add small amounts of grapes, peas, or dressing, mix, and weigh again. If it is above four pounds, reserve some salad. Record the actual amounts you used if you want to repeat the batch more accurately.

A large mixing bowl makes folding a batch this size easier and helps reduce spills. Costco’s reference recipe calls for a medium-large serving bowl, but it does not specify a capacity for a four-pound batch.

Keep the salad cold and handle it safely

  • Refrigerate at 40°F or below. USDA Food Safety and Inspection Service guidance says cold perishable food should be kept at or below this temperature. Use a refrigerator thermometer if you are unsure of the setting. See USDA FSIS: Leftovers and Food Safety.
  • Limit time at room temperature. Discard perishable food left out for more than two hours, or more than one hour when the surrounding temperature is above 90°F, according to FSIS guidance.
  • Cool a large batch in shallow containers. Rather than leaving four pounds in one deep bowl to cool, divide it among shallow containers so it cools more quickly. Keep it refrigerated while it chills.
  • Use clean hands and utensils. This salad is ready to eat after mixing and has no later cooking step. USDA Agricultural Research Service material identifies contamination and mishandling as concerns for ready-to-eat deli salads. Its 2006 abstract reports that Listeria grew in contaminated salad products under the study conditions, including products with acidic mayonnaise; that is a reason to prioritize clean handling and refrigeration, not a reason to treat mayonnaise as inherently unsafe. How long it keeps

USDA FSIS lists homemade and store-prepared macaroni and similar salads at three to five days refrigerated. Treat that as the maximum storage window for this salad, provided it has been kept cold and handled safely; discard it sooner if it has spent too long at room temperature. The same chart gives opened commercial mayonnaise labeled “refrigerate after opening” a two-month interval, but that longer interval does not apply after mayonnaise is mixed into a prepared salad—the salad’s shorter storage guidance governs.

Adapting the flavor without changing the style

Keep the grape-and-herb profile distinct if you want this creamy version. If you prefer the other Costco Connection example, make a tuna-and-vegetable pasta salad with tuna, corn, red and green bell peppers, red onion, yellow mustard, mayonnaise, salt, pepper, and optional paprika instead. The two references are separate recipes, not a combined formula.

For either style, adjust dressing gradually after chilling: pasta can take up dressing as it rests, while wet mix-ins can loosen it. Those are practical recipe-development considerations rather than tested comparisons of how either salad stores or holds texture.
