Choose peppers that feel firm and heavy, with smooth, glossy, unbroken skin; keep whole peppers dry and unwashed in the refrigerator crisper. Use them within about five days to a week, depending on their condition and how they are stored. Refrigerate cut peppers and use them promptly, or freeze extras for later cooking.

How to choose fresh sweet peppers

Look for peppers with firm, smooth skin and a substantial feel for their size. A fresh-looking green stem is another useful cue. Choose peppers with good color and glossy, intact surfaces.

  • Avoid peppers that are soft, dull, wrinkled, cut, broken, or marked with black spots.
  • Do not judge freshness by color alone. Pepper color varies with maturity, and red is not the only sign of a fresh pepper.

These selection cues are consistent with guidance from Clemson Extension, Purdue Extension, UC San Diego, and the University of Maine Cooperative Extension.

How to store whole peppers in the refrigerator

  1. Keep whole peppers dry and unwashed until you are ready to prepare them.
  2. Put them in a bag or container and store them in the refrigerator crisper drawer. A breathable produce bag is one option; UC San Diego names grocery produce bags and reusable cotton, muslin, or mesh bags.
  3. Check their condition and use them while they remain firm and sound. Extension recommendations range from up to five days to about one week, so treat that as guidance rather than a guaranteed shelf life.

Clemson Extension describes 45°F as ideal and estimates about a week in a typical home refrigerator around 40°F. Iowa State University Extension advises against storing bell peppers below 35°F. Because refrigerator temperatures and drawer conditions vary, use the crisper rather than assuming one precise temperature or duration will deliver the same result in every home.

Before eating or cooking, rinse peppers under cool running water. Purdue and Iowa State recommend this step; keeping peppers unwashed during storage helps avoid adding moisture before you need them.

How long cut peppers keep

Refrigerate washed, cut peppers in a covered container and use them promptly. The University of Massachusetts Amherst recommends up to two days, while UC San Diego advises up to three days in an airtight container. These are different recommendations, not a single guaranteed limit; follow the shorter window if you want a cautious plan.

USDA Agricultural Research Service researchers evaluated 50 pepper varieties and reported deterioration, including fluid leakage, in fresh-cut sweet bell and elongated peppers after 10 to 14 days under the study’s storage conditions. That was research on pepper quality, not a home-leftover storage allowance, and it does not replace the shorter household guidance.

How to freeze peppers for later

Freezing works well when you plan to use peppers in cooked dishes. Nebraska Extension says raw sweet peppers can be frozen without blanching.

  1. Wash the peppers, then remove the stems, seeds, and membranes.
  2. Cut them to the size you expect to use later.
  3. Spread the pieces in a single layer on a tray and freeze until firm.
  4. Transfer them to a labeled freezer bag, pressing out as much air as practical.

Nebraska Extension and the University of Massachusetts Amherst give about eight months as a general best-quality period for frozen peppers or vegetables. Treat that as a quality guideline, not a guarantee that texture will remain unchanged; thawed peppers are most useful in cooked dishes.
