Portion large batches into shallow containers, keep your refrigerator at or below 40°F (4°C), and use most cooked leftovers within 3–4 days. Freeze food sooner if you will not eat it in that window, and reheat leftovers to 165°F (74°C).
How soon do you need to refrigerate leftovers?
FoodSafety.gov’s U.S. guidance, reviewed August 14, 2025, sets a maximum of 2 hours at room temperature for perishable food before it should be refrigerated or discarded. If the surrounding temperature is above 90°F (32°C), the limit is 1 hour. The clock is about time spent outside safe cold storage, not whether food still looks or smells fresh. If food has been out too long—or you cannot establish how it was handled—discard it rather than tasting it to decide.
Reheating does not make food safe after it has exceeded the recommended time out. Move leftovers into cold storage promptly, and do not leave them on the counter while waiting for a large pot or roast to cool completely.
Can you put hot food straight into the refrigerator?
Yes. FoodSafety.gov says, “It’s OK to put hot foods directly into the refrigerator.” For faster, more even cooling, divide a large quantity of soup, stew, roast, or other cooked food among clean, shallow containers, then cover and refrigerate them promptly. Smaller portions also make it easier to reheat only what you plan to eat.

Keep the refrigerator at or below 40°F (4°C) and the freezer at or below 0°F (-18°C). Appliance thermometers can help verify the actual temperatures rather than relying on a dial setting. See FoodSafety.gov’s cold-storage charts for the official temperature and storage guidance.
How long can leftovers stay in the fridge?
For many cooked leftovers, the refrigerator window is short. FoodSafety.gov lists cooked meat and poultry leftovers, as well as soups and stews, at 3–4 days in a refrigerator kept at 40°F (4°C) or below. The chart contains item-specific entries, so do not apply that range automatically to every food.

Label containers with the date they were stored so you can use older portions first and make a timely decision about freezing. Should you refrigerate or freeze leftovers?
Use the refrigerator for food you expect to eat within its recommended cold-storage window. If you will keep it longer, freeze it before that window ends. Freezing stops the refrigerator countdown while food remains frozen, but it does not sterilize it: FoodSafety.gov notes that freezing does not destroy harmful germs. Food that was mishandled before freezing is not made safe by freezing.

The freezer ranges are quality recommendations, not safety deadlines. Food kept continuously at 0°F (-18°C) or below may remain safe beyond those ranges, though flavor or texture can decline. For food-specific quality guidance, check the cold-storage chart.
How should you package leftovers to preserve quality?
- Store portions promptly in clean, covered containers. Airtight packaging helps retain moisture and reduce odor transfer.
- Use shallow portions for faster cooling, and freeze in practical serving sizes so you do not need to thaw or reheat the whole batch.
- For freezer storage, use freezer-safe packaging, remove excess air where practical, and label the food and date.
- Keep sauces or crisp components separate when that will help preserve the finished dish’s texture.
These steps can help food taste better, but storage containers cannot compensate for unsafe time or temperature handling.

What temperature should reheated leftovers reach?
Reheat leftovers to an internal temperature of 165°F (74°C), the FoodSafety.gov recommendation. A food thermometer gives you a direct check; measure the food rather than judging by steam or appearance alone.
Microwaves can leave cold spots. Cover the food, stir or rotate it when appropriate, allow standing time after heating, and check the temperature in several places. Reheat only the portion you need when practical instead of repeatedly warming the entire batch. See FoodSafety.gov’s temperature guidance for safe minimum internal temperatures.
