To keep slow-cooker soup from turning out watery, start with a slow-cooker-specific recipe and its stated liquid amount rather than carrying over a stovetop recipe’s quantity. If the soup is too thin after cooking, thicken it gradually with a smooth cornstarch-and-water solution, checking the texture as you go. The right consistency depends on the soup: brothy soups are meant to stay fluid.
How much liquid should you add to slow-cooker soup?
Use the amount in a recipe written for a slow cooker. Slow cooking does not allow liquid to evaporate as readily as many stovetop methods, so transferring a stovetop recipe’s full liquid quantity can leave the finished soup thinner than intended.
When a recipe does not specify a precise amount, Purdue Extension’s general guidance is to add water only until the vegetables are covered. It also notes that you can add more liquid at the end if you want a thinner soup. This is a rule of thumb, not a universal broth-to-ingredient ratio; recipes and ingredients vary. How to thicken soup that is already too thin
Use a cornstarch slurry
- In a separate small container, mix cornstarch with cold water until smooth.
- Stir some of the solution into the soup’s cooking liquid.
- Give it time to thicken, then check the consistency before adding more.
Purdue Extension recommends a cornstarch-and-water solution for thickening slow-cooker juices, but does not specify a dose that works for every batch. Add it incrementally rather than assuming a fixed amount will suit every pot. If the soup is already at the consistency the recipe intends, there is no need to thicken it.

Consider reducing liquid only when it suits the recipe
Leaving the cooker uncovered may allow liquid to reduce, but the result and timing depend on the recipe, appliance and how far cooking has progressed. The available food-safety guidance does not establish one safe uncovered duration for every slow cooker and soup. Keep hot food at or above 140°F (60°C), and do not sacrifice safe hot holding or cooking progress to reduce the liquid. Keep the cooker’s fill level separate from the soup’s liquid ratio
How much broth or water a recipe needs is different from how full the appliance should be. FoodSafety.gov advises filling a slow cooker between half and two-thirds full for safe cooking. Follow the appliance manual and the recipe, too. The agency also notes that vegetables cook more slowly than meat and poultry and recommends putting vegetables in first for best quality. Store leftover soup safely
Refrigerate leftovers within two hours. FoodSafety.gov lists soups and stews as keeping for three to four days in the refrigerator or two to three months in the freezer. These are storage recommendations, not a reason to leave soup at room temperature while waiting for it to thicken or cool. See Refrigerated Food and Power Outages.
