Yes—homemade pesto needs prompt refrigeration. Keep it at 40°F (4°C) or colder and use it within three days, or freeze it for longer storage. For store-bought pesto, follow the jar’s directions: products differ, and the label tells you whether to refrigerate it before opening and how to store it after opening.
Does pesto need to be refrigerated?
Homemade pesto is perishable. Refrigerate it within two hours of making it, in a refrigerator set to 40°F (4°C) or below. Oregon State University Extension’s pesto recipe advises using leftovers within three days or freezing them. Its separate refrigeration guide sets four days as the maximum for pesto; treat that as an upper limit, not a guarantee. FoodSafety.gov’s refrigeration guidance gives the 40°F limit, while Oregon State’s recipe and refrigeration guide provide the pesto-specific directions.
Commercial pesto does not have one storage rule that applies to every jar. Keep products labeled “keep refrigerated” cold. A sealed shelf-stable product may be stored at room temperature if its label allows it, but refrigerate it after opening when instructed and follow its stated use-after-opening period.
How long does pesto last in the fridge?
Homemade pesto
Use homemade pesto within three days for the more conservative, recipe-specific target. Oregon State Extension’s separate guidance says pesto should not be stored for more than four days. These are refrigerated-storage recommendations, not a promise that pesto remains safe for that entire period if it was left out too long or kept above 40°F (4°C).

Store-bought pesto
Check both the storage instruction and the post-opening period on the actual package. Formulation and processing vary, so there is no single verified fridge-life duration for every commercial pesto.
A 2021 study of two shelf-stable industrial pesto products reported microbiological stability through at least 20 days in a household-use simulation. The products’ labels indicated five days after opening, and the study involved five households and two use scenarios. That finding applies to the tested products and study conditions; it does not establish that other jars can be kept for 20 days or justify ignoring a package’s directions. Can you freeze pesto?
Yes. Freezing is the practical option when you want to keep homemade pesto longer than a few days. Oregon State Extension recommends freezing pesto in ice cube trays or muffin tins, then transferring the solid portions to an airtight freezer container. Freeze portions you can use at once so you do not have to thaw the whole batch.
Oregon State gives up to one year in the freezer as a planning period. That is not the same as a safety cutoff: FoodSafety.gov says food kept continuously frozen at 0°F (-18°C) or below remains safe indefinitely, though quality can decline. Pesto’s texture and flavor may change over time. FoodSafety.gov’s cold-storage chart provides general storage guidance but does not list pesto separately.

How long can pesto sit out?
Refrigerate pesto within two hours at ordinary room temperatures. If the surrounding temperature is above 90°F (32°C)—for example, during outdoor serving on a hot day—refrigerate it within one hour. These are general limits for perishable foods from FoodSafety.gov.
If pesto has been left out beyond those limits, do not rely on its smell or appearance to decide whether it is safe. Harmful contamination may not produce obvious changes, and tasting questionable food is not a safe test.
