No reviewed evidence establishes that one method always tastes best. Decaf also is not caffeine-free.
How decaffeination works
Decaffeination takes place before roasting: green, unroasted beans are treated to remove caffeine, then roasted. The method named on a bag refers to how caffeine was extracted from those beans. Drink Decaf’s explainer, updated August 18, 2026, describes the broad process options.
How the four process labels differ

How to read a decaf label
Ask, “How is your decaf made?” Labels or seller descriptions may say “Swiss Water or CO2” or identify “a chemical solvent.” Look for the method by name rather than assuming a generic “decaf” label tells you how the beans were treated. “EA,” “ethyl acetate,” “sugarcane,” “MC,” and “DCM” are useful terms to check in product details. Drink Decaf’s consumer guide uses these plain-language distinctions.
Which process tastes best?
There is no supported universal taste ranking among these processes. Decaffeination changes the bean, and process may be one factor in the final cup, but origin, green-coffee quality, roast profile, and brewing also matter. Swiss Water’s statement that its process retains origin character is a company claim; broad flavor comparisons in consumer explainers are not controlled sensory studies.

For a useful comparison, try coffees from the same roaster and origin prepared with the same brew method, where possible. Choose the cup you enjoy rather than relying on a process label to guarantee a flavor.
How much caffeine is in decaf?
Decaf still contains some caffeine, and the amount varies by coffee and serving. The National Coffee Association of U.S.A. says decaffeination removes at least 97% of caffeine and gives about 2 mg as a typical cup figure. Drink Decaf gives a broader typical range of 2–15 mg per 8-ounce cup. These are attributed typical figures, not guarantees for an individual bag or serving. National Coffee Association; Drink Decaf.

What the methylene chloride limit does—and does not—tell you
The National Coffee Association reports that the U.S. FDA limit for methylene chloride traces in decaffeinated coffee is 10 parts per million. This is a U.S. figure for that specific compound; it does not establish that decaf contains no residue, describe rules for ethyl acetate or other solvents, or state requirements in other jurisdictions. A simple way to choose
- If you specifically want water-and-carbon processing, look for “Swiss Water Process.”
- If you want CO₂ processing, check that the product names CO₂ rather than relying on “decaf” alone.
- If you want to avoid a named solvent, read the product details for EA/ethyl acetate or MC/DCM/methylene chloride and select a clearly identified alternative.
- When flavor matters most, compare coffees with similar origin and roast from the same roaster, then judge the brewed cup.
