To thicken pot pie filling without a gluey texture, first reduce excess broth or drain watery vegetables. For a dependable sauce, cook a smooth butter-and-flour roux, add stock gradually, and simmer it as directed. Remember that the filling thickens in the oven; rest the baked pie before serving. Use a small cornstarch slurry only as a cautious adjustment if the cooked filling is still thin.
Why pot pie filling turns out thin
A filling can be runny because it contains more broth than the sauce needs, or because vegetables release water as they cook. Adding extra starch may disguise that excess liquid, but can also make the sauce heavier than intended. Start by managing the liquid rather than reaching immediately for another thickener.
Reduce broth and drain watery vegetables
If the filling is still in the saucepan, gently reduce excess stock or broth. Peas, carrots, and onions can also contribute liquid; cooking them separately and draining them before adding them can help keep the sauce from becoming watery. Follow the quantities and cooking time in the recipe you are using rather than assuming one ratio works for every filling. A roux needs to be combined smoothly and cooked as directed; simply stirring raw flour into a finished filling is not the same method.
Account for thickening in the oven
Do not make the stovetop filling much thicker than the finished consistency you want. The sauce thickens as the pie cooks, as King Arthur Baking notes in its chicken pot pie with biscuits recipe. A filling that looks a little loose before baking may be right once the pie is cooked and rested.

Use cornstarch only for a small correction
If the cooked saucepan filling still seems thin after excess liquid has been addressed, a cornstarch slurry is an optional adjustment. Mix a small amount of cornstarch with cold broth or water until smooth, stir it into the simmering filling, and cook until it thickens. Add it incrementally rather than pouring in a large amount at once.

If the pie is already baked
Give it time to rest before serving. King Arthur Baking’s classic chicken pot pie recipe calls for about 20 minutes of resting so the filling can set and the pie is easier to serve (recipe). For a pie that remains very runny after resting, the cited recipes do not establish a reliably tested way to thicken the filling in place; avoid assuming that adding starch after baking will fix it.

- Use less stock or broth if the recipe allows, and watch for liquid released by vegetables.
