Freeze bread, pastries, and cakes while they are fresh and fully cooled, wrap them tightly in freezer-suitable packaging, and thaw plain baked goods in their wrapping. At 0°F (−18°C) or below, the times in extension guides are quality targets—not food-safety deadlines. Fillings such as custard, cream, or cheese need more cautious handling than plain baked goods.
How to freeze bread, pastries, and cakes
- Freeze while fresh. Freezing preserves the quality a baked good has when it goes into the freezer; it will not make stale bread or dried-out cake fresh again. Let it cool completely first so trapped heat and moisture do not compromise the package. USDA FSIS explains freezing and food safety, and University of Missouri Extension covers home-prepared foods.
- Choose a useful portion. Freeze a loaf whole if you expect to use it at once, or slice it first for convenient single servings. Divide pastries and cakes into portions if that suits how you will serve them. Place freezer paper between pieces that might stick together.
- Wrap to limit air exposure. Use freezer-weight plastic bags, heavy plastic wrap, aluminum foil, or freezer paper; remove as much excess air as practical and seal securely. For extra protection, wrap the item and place it in a freezer bag. USDA FSIS lists suitable freezer packaging materials.
- Protect decorated cakes. If appearance matters, avoid crushing frosting or decorations. Missouri Extension recommends freezing cake and frosting separately for best results; for a frosted cake, first freeze it uncovered on a tray until firm, then package it carefully.
- Label and freeze promptly. Write the item and date on the package. Arrange packages in one layer and stack them only after they are frozen solid, following USDA FSIS guidance for freezing food.
Keep the freezer at 0°F (−18°C) or below. Packaging and prompt freezing help preserve texture and flavor, but neither can reverse quality loss that happened before freezing.
How long can you keep baked goods frozen?
The periods below are University of Illinois Extension quality recommendations for storage at 0°F; the retrieved page did not state a publication year. They are guides, not precise guarantees, and other extension publications give different estimates for some categories. For example, Missouri Extension suggests about three months for baked bread, coffee cake, rolls, and cakes, and two to four months for quick breads. These estimates concern quality, not the point at which food automatically becomes unsafe. USDA FSIS says food kept properly frozen remains safe almost indefinitely, although quality can decline. Freezing to 0°F inactivates microbes while food is frozen; it does not sterilize food, and microbes can become active again after thawing. USDA FSIS explains the distinction.

How to thaw bread, pastries, and cakes
Plain bread and unfilled baked goods
Thaw most baked goods without fillings in their wrapping at room temperature, following the item-specific advice from Missouri Extension. Keeping the package on during thawing helps limit drying and condensation on the food. For bread slices, you can also take out only what you need and toast them from frozen if that suits your use.
Frosted or filled cakes
Missouri Extension recommends thawing frosted or filled cakes in the refrigerator. The right handling depends on the filling and topping: treat cream, custard, cheese, and other perishable ingredients cautiously, and follow applicable refrigeration directions rather than assuming a cake is safe on the counter because its sponge is baked.

Perishable foods and safe thawing
Room-temperature thawing advice for ordinary baked goods is not a general method for perishable food. USDA FSIS identifies refrigerator, cold-water, and microwave methods for thawing foods generally and warns against thawing perishable foods on the counter. Use the method appropriate to the product and its directions. USDA FSIS outlines safe defrosting methods.

What to do after a freezer outage
Use the outage-specific guidance in the FoodSafety.gov chart rather than judging safety by appearance or smell alone. In the chart’s circumstances, breads, rolls, muffins, and cakes without custard fillings may be refrozen. Cakes, pies, and pastries with custard or cheese filling should be discarded if exposed to temperatures above 40°F for more than two hours.
