mpv: for configurable playback
mpv is free software with a command-line-oriented design. Its official repository says it supports a wide variety of media formats, audio and video codecs, and subtitle types. It lists Windows 10 version 1607 or later, macOS 10.15 or later, and reasonably current Linux distributions. SMPlayer: for playback controls on Windows and Linux
SMPlayer is a free, GPL-licensed, open-source player for Windows and Linux. Its official site highlights playback resume with previous settings, speed adjustment, and audio and subtitle delay controls. It also supports mpv as a playback backend. SMPlayer official site
