Sour or bitter espresso is a clue, not a diagnosis: extraction, drink strength, roast, and coffee choice can all affect the taste. Start by weighing your coffee dose and the espresso in your cup, then make one small adjustment at a time. That gives you a repeatable way to find what suits your coffee and equipment without treating any single shot time or recipe as a universal fix.
First, distinguish unpleasant sourness from normal coffee acidity
Coffee can taste bright, tangy, or fruity without being badly brewed. The question is whether the acidity tastes unpleasantly sharp and under-developed to you, or whether it is simply a feature of that coffee’s roast and flavor profile. Do not assume every sour note is a brewing fault.
Low extraction can be associated with sour or grassy, under-developed flavors. Specialty Coffee Association (SCA) material connects sour sensory intensity with extraction yield and drink strength, but its detailed brewing-chart discussion is based on brewed coffee research. Why espresso tastes bitter
Bitterness can reflect the coffee itself as well as how it is brewed. Roast character is a significant source; brewing choices and high drink concentration can also magnify bitterness. Sourness and bitterness are not perfect opposites or precise readouts of extraction. Treat taste as one clue, then compare it with how quickly the shot runs, how strong it tastes, and whether the same coffee tastes this way with a repeatable recipe.
Use a measured shot as your starting point
Weigh the dry coffee going into the basket and the espresso coming out. A scale makes it possible to repeat an adjustment and tell whether the change in taste followed a change in grind, dose, or output. In an SCA survey conducted in 2017 and published in 2018, 275 respondents—just over three-quarters from the United States—reported their espresso practices. Surveyed baristas averaged an 18–20 g dose and 36.5 g output; 51% reported an average extraction time in the 25–30 second range. Use those figures only as context for a repeatable starting recipe. Record your dose, output, shot time, grinder setting, and coffee. Aim to improve the taste rather than force the shot to match a nominal time.
Adjust the shot one variable at a time
- Keep the dose steady. Weigh the same amount of ground coffee for each test.
- Choose and measure a target output. Weigh the espresso in the cup so you can reproduce the same yield.
- Change grind in a small step. If a sharply sour shot also runs quickly, try a slightly finer grind while holding dose and output steady. If a bitter or drying shot runs slowly, try a slightly coarser grind under the same conditions. These are diagnostic experiments, not guaranteed cures.
- Taste and record the result. Note the dose, output, time, grind setting, and coffee. Keep the change if it improves the flavor; otherwise return to the previous setting or try a different single adjustment.
Grind size is an important brewing variable, and grinder behavior can contribute to variation in extraction. Adjust the grinder you have before assuming new equipment is necessary. SCA’s discussion of grinders and brewing

If grind changes do not solve it, check the coffee and equipment
- Roast and flavor profile: If the shot is consistently bitter despite repeatable preparation, the roast may simply taste more bitter to you. If it is cleanly bright rather than unpleasantly sharp, that acidity may be part of the coffee’s profile.
- Freshness and consistency: Compare another coffee and check whether your grinder is producing a consistent grind. Inconsistent grinding can make extraction behavior less predictable.
- Machine condition: If shots have become inconsistent, consider whether the machine needs routine cleaning or maintenance before continuing to chase recipe changes.
Leave temperature and water for later checks
Temperature affects how quickly coffee extracts, but it is not a universal taste fix. In controlled brewed-coffee research discussed by the SCA, coffee brewed at 87°C, 90°C, and 93°C was compared; when strength and extraction were similar, temperature alone had little sensory impact in those tested conditions. That finding concerns brewed coffee, not a universal espresso-machine prescription. Water composition may also matter, but the SCA notes that the precise effect of hardness on extraction is not settled. Treat water as a later diagnostic consideration, not a guaranteed first fix or a reason to apply one water recipe to every espresso setup. SCA’s discussion of water and coffee acidity
