Induction heating (IH) makes the rice cooker’s inner pan itself generate heat. Coils in the cooker create a changing magnetic field, which induces electrical current in the magnetic pan; the pan’s resistance turns that current into heat. Unlike a conventional cooker, which usually heats the pan with an element underneath it, IH does not rely on a separate bottom plate as the primary heat source.

How induction heating works

  1. Coils create a changing magnetic field. Alternating electric current flows through coils around the cooker body.
  2. The magnetic field induces current in the pan. The inner pan must have magnetic material that responds to the field.
  3. The pan heats itself. Electrical resistance in the pan converts the induced current into heat, so the pan becomes the heat source. Zojirushi explains the mechanism in its July 9, 2026 IH explainer.

Panasonic describes IH as using magnetic force lines to generate heat in the metal pan, while its conventional microcomputer (MICOM) cooker uses a bottom heater to heat the pan. IH designs can heat the pan at the bottom and sides, though the exact construction varies by model. See Panasonic’s rice-cooker type comparison.

What IH changes during cooking

Because heat is generated in the pan, an IH cooker can adjust heat output responsively as the cooking program moves through stages such as soaking, boiling, and steaming. Manufacturers say this broader heating and finer temperature control can support more even cooking and improve rice texture. Those are manufacturer-described benefits, not a universal result established by independent, controlled comparisons across cooker types.

IH does not necessarily make a rice cycle shorter. Zojirushi says overall cook time is comparable to conventional MICOM cookers; its stated advantage is more precise control of the cooking stages, not a guaranteed faster finish.

IH and pressure are different features

IH describes how the cooker makes heat. Pressure describes a cooking condition. Panasonic says pressure-type rice cookers raise water temperature above 100°C. A model can combine pressure and IH, but IH alone does not mean the cooker is pressurized. Zojirushi lists pressure-plus-IH models separately from IH models on its IH lineup page.

What to check on a specific cooker

IH does not specify the cooker’s capacity, menu options, voltage, or wattage. Those depend on the model. For example, Zojirushi’s NW-QAC10/18 product page lists two sizes:

The same product line lists settings for white and quick white rice, mixed rice, sushi/sweet rice, Jasmine and quick Jasmine rice, congee, brown and GABA brown rice, steel-cut oatmeal, quinoa, and steaming. These are features of that line, not a standard menu shared by all IH cookers. If buying a replacement inner pan or measuring cup, confirm that it is compatible with the exact model.

How to interpret efficiency claims

Panasonic Corporation’s 2020 release gives an approximately 90% heat-efficiency figure for IH cookers generally, attributing it to heat being generated by the pan itself. It is not a rice-cooker-specific measurement or an independent comparison of rice cookers. The release also says Panasonic’s SR-IH18 IH rice cooker launched in 1988 and focused on precise temperature adjustment through frequency control. Panasonic states, “IH is an initialism of Induction Heating.” See its November 18, 2020 corporate release.
