Keep a kitchen scrap pail fresh
Choose a lid and empty scraps every few days
A secure, tight-fitting lid helps contain odors and keep pests away. A clean reused tub with a lid works; you do not need to buy a dedicated countertop bin. Portland advises not letting scraps sit for more than a few days, even when there is only a small amount. Empty the pail sooner if its contents are wet or smell strongly. Portland’s food-scrap guidance and King County’s food-scrap guidance recommend a lidded container; Seattle also advises taking scraps to the outdoor cart regularly in its food-waste guidance.
Rinse and wash the container
Rinse the pail whenever you empty it. Wash it with detergent and water when feasible, and give it a soap scrub or run it through the dishwasher at least weekly. Seattle Public Utilities recommends a thorough wash with detergent and water after every use; Portland advises a quick rinse after emptying and at least weekly cleaning with soap or in a dishwasher.
Control moisture and residue
Drain excess liquid from scraps before adding them. A layer of paper, newspaper, or paper towel can absorb moisture and help keep the container clean. Seattle also suggests baking soda to reduce odor, but it does not replace emptying and washing the pail. If you use a liner, check your local collection program’s rules: accepted materials vary, including for compostable bags. Portland, Seattle, and King County publish local guidance, not a universal list of accepted liners.

When to refrigerate or freeze scraps
If you cannot empty the pail every few days, store scraps in the refrigerator or freezer until collection. Portland and the U.S. Environmental Protection Agency list cold storage as an option, and King County specifically notes that freezing reduces odor. This trades more frequent trips to the outdoor cart for space in your refrigerator or freezer.
Do you need a special bin or carbon filter?
No. A reused lidded tub can collect scraps just as a dedicated countertop pail can. Some bins have a carbon filter beneath the lid; King County mentions this as an option, not a requirement. The guidance does not establish that filters are necessary or quantify how much they reduce odor. Compatibility and replacement needs depend on the particular product.

If the smell is coming from an active compost pile
A kitchen pail only stores scraps; an active pile is a different system. The EPA says a bad smell from a home compost pile can indicate too much moisture or too little air. Add dry “browns,” such as dry leaves, and turn the pile to improve airflow. Do not treat a smelly pile simply by washing the kitchen pail.
If fruit flies are in an indoor worm bin
In an indoor worm bin, keep food scraps covered rather than exposed. The EPA’s indoor worm-bin instructions say, “Exposed food attracts fruit flies, but covered food scraps don’t.” Cover scraps with soil and moist paper, then close the bin. This advice is specific to worm-bin care, not a substitute for routine cleaning of a kitchen collection pail.

Are fruit flies a health risk?
Seattle Public Utilities says fruit flies “will not harm you or the food waste, but they can be pesky.” Seeing them is a nuisance; use a lid, remove scraps regularly, and clean residue from the container to make the pail less inviting.
