To keep perishable school lunch food safe, pack it cold in an insulated lunch bag with two frozen cold sources, then refrigerate it at school if possible. Keep cold food at 40°F (4°C) or below; if perishables have been unrefrigerated for more than two hours—or more than one hour when temperatures are above 90°F (32°C)—discard them.
Pack a cold lunch in the morning
- Start clean. Wash your hands and use clean surfaces. Keep raw foods separate from ready-to-eat foods to prevent cross-contamination. FoodSafety.gov notes that 97 percent of participants in a USDA test kitchen did not wash their hands properly; the cited article does not state the test year, sample size, or methods, so this is not a current population estimate. FoodSafety.gov’s school-lunch guidance also advises against reusing packaging, such as resealable plastic bags, if it could contaminate food. - Chill the food before packing. Refrigerate perishable ingredients before they go into the lunch bag. If you prepare lunch the night before, refrigerate the packed lunch overnight.
- Use insulation and two frozen cold sources. Put the food in an insulated lunch bag with two cold sources, such as frozen gel packs, a frozen water bottle, or a frozen juice box. A bag by itself is not a substitute for cold sources. FoodSafety.gov puts it this way: “Keep perishable foods like deli meats in an insulated lunchbox with a cold source, such as a frozen gel pack, water bottle or juice box.” Its school-meal guidance recommends two cold sources. - Refrigerate it at school if you can. Store the lunch in a school refrigerator promptly. FoodSafety.gov suggests leaving the lunch bag open in the refrigerator so cold air can circulate. If there is no refrigerator, keep the bag closed and packed with its cold sources; without knowing the food’s temperature, you cannot assume a particular safe duration. Follow school rules about refrigeration and food containers.
Know when to discard perishable food
The food-safety danger zone is 40°F (4°C) to 140°F (60°C). Keep cold perishables at 40°F (4°C) or below. Perishable food should not remain unrefrigerated for longer than two hours, or one hour if the surrounding temperature is above 90°F (32°C). If it exceeds the applicable limit, throw it away. Do not use smell or taste to judge whether it is safe; when in doubt, throw it out. FoodSafety.gov’s cold-food guidance and power-outage food-safety guidance explain these limits.
Pack soup and other hot food differently
For soup or chili, preheat an insulated food container by filling it with boiling water, then empty it and add piping-hot food. Close the container and keep it closed until lunchtime. The cited school-meal advice says hot food should stay at or above 140°F (60°C). FoodSafety.gov’s school-lunch instructions describe this method.
Choose lunch gear for the job
Choose an insulated lunch bag with enough room for the meal and two cold sources, and consider whether its surfaces are easy to clean. Use a separate insulated food container for hot foods; the lunch-bag guidance does not establish that a particular bag or product will hold a safe temperature. Frozen gel packs are one option, but a frozen water bottle or juice box can serve as a cold source too. A food thermometer can help check temperatures, but it does not replace proper chilling, insulation, or time limits.
