Vertical farming is a workable production method for certain fresh crops in certain places, but the evidence does not support treating it as a general fix for food-system problems. Controlled environments and high output per square meter come with heavy electricity demand, emissions that depend on how that electricity is generated, a narrow crop range, and largely unanswered questions about social and economic effects.
The strongest case for vertical farming
Controlled-environment production has real advantages. A 2021 review in Nature Food describes potential for year-round, climate-resilient output, reduced land and water use, and lower releases of pesticides and fertilizers in some system designs. Those are potential advantages of particular designs, not guaranteed outcomes for every facility, and the same review points to a limited range of crops and unresolved scale-up challenges.
The case is strongest for fresh, perishable produce grown close to consumers in places where land is scarce, the climate is hostile or supply is unreliable. A European Parliamentary Research Service briefing notes a possible fit in land-scarce urban areas and in extreme environments, while also flagging high energy demand, costs, profitability and consumer acceptance. The briefing states that its views should not be taken as the European Parliament’s official position.
Yield per square meter is not the same as affordable food
A vertical farm can produce a large amount of food from a small footprint. The question that matters for food-system planning is different: can the method supply inexpensive calories or protein at scale? The evidence on that question is much weaker than the evidence on yield.

Energy sets a cost floor
A 2025 analysis in Plant Physiology estimates a current minimum cost of approximately $10 per kilogram of dry plant matter, based on energy requirements and the authors’ assumptions. On that basis, the authors conclude that vertical farming cannot compete with dried cereals and pulses. This is a modeled minimum, not an observed farmgate price, a retail price or a quote, and it should not be read as a figure that applies to every facility.
The same authors state that the electricity source strongly affects environmental impacts, and that low-impact electricity and better energy efficiency would be needed for better outcomes.
The cost estimate is expressed per kilogram of dry matter, which is a different basis from the fresh-weight figures used for most produce. The crop-by-crop position in the same analysis is shown below.

Crop range limits what the method can replace
The 2021 Nature Food review describes a limited range of crops grown in these systems. The cost analysis points the same way for fresh crops, finding only limited competitiveness for tomatoes and lettuce. Taken together, the crop evidence suggests vertical systems are better assessed as suppliers of specific fresh crops than as a route to bulk calories or protein. That is an inference from these studies, not a finding that any of them states directly.
Lifecycle results depend on the comparison and the electricity
A life-cycle assessment (LCA) totals environmental impacts across a product’s stages. Its totals depend on two choices: the functional unit, which is what the result is expressed per, and the system boundary, which is what gets counted. Two LCA figures cannot be compared until both choices match.

Lettuce: a UK comparison with field production
A 2025 comparative LCA examined commercial vertical-farm lettuce against field-grown lettuce in UK and Spanish scenarios. In the UK comparison, the vertical farm had higher impacts in every assessed category except water use. Switching the vertical farm to renewable electricity narrowed the greenhouse-gas gap with field lettuce, but it did not make the two results identical.

The yield gap is large, and the study presents land sparing as a possible benefit. Whether that benefit is real depends on what happens to the land afterward, which is covered below. These figures describe this study’s cases and boundaries; they are not a general ratio between the two systems.
Chili peppers: the power source can change the result
A 2026 life-cycle assessment of chili peppers grown in a container vertical farm, by a team at the Technical University of Munich, shows how far the electricity scenario can move the outcome. System-level energy use was 922 kWh per kilogram of dry weight, and water use was 14 liters per kilogram of dry weight. The climate-impact result depended on the electricity scenario:

In this single study, the fossil-based scenario is roughly 19 times the renewable-plus-waste-heat scenario. That is not an average for all farms. The crop, system design, energy scenario and measurement basis all differ from the lettuce comparison, so the two studies should not be averaged or read as if they came from one trial.

What the evidence does not yet establish
Most of the rigorous work on these systems measures environmental outcomes. The gaps matter because the broader claim that vertical farming can repair food systems depends on questions that environmental measurements do not answer.
Environmental questions dominate the literature
A 2025 systematic review published in the Journal of Cleaner Production covered 92 studies. It found that assessments emphasized environmental indicators, often through LCA, while social and economic factors received less attention. Interactions and trade-offs between sustainability dimensions were also insufficiently explored. The review recommends assessments that account for location and time, including local resource availability, food availability, long-term economic viability and climate trends.
Land spared is only a benefit if it is used well
The argument for land sparing assumes that land released by high-yield indoor production is restored to other uses or left undeveloped. The lettuce study raises this as a possible benefit, but notes that realizing it depends on how the spared land is subsequently used. Until that is specified, the saving is only potential.

Access, labor and distribution are largely unmeasured
The reviewed literature gives limited attention to whether vertical farming improves food access, affordability, worker conditions or overall resilience. Those are central questions for any food system. Answering them requires place-specific data on prices, who buys the output, labor conditions and distribution. Until that data exists, claims in either direction should be treated as unproven.
Where vertical farming fits
The defensible position is conditional. Vertical farming may complement field farms and greenhouses in defined niches, but the evidence does not support presenting it as a standalone fix. A project is easier to assess when it meets these tests:
- It grows fresh crops where local supply is constrained, rather than staples intended to replace field-grown calories.
- Its electricity source and cooling method are named, and its emissions claim reflects that specific configuration.
- Its environmental comparison states the functional unit, the system boundary, the comparator and the energy scenario used.
- Any land-saving claim includes a plan for what happens to the land it frees.
- Its cost, price, labor and access effects are documented for the place where it operates, rather than inferred from yield figures.
Without those tests, a high yield per square meter says little about whether a project helps the food system.
