If a microwave air fryer combo leaves one area cold while another is browned or overcooked, first check which cooking mode you used. Microwave, air-fry, convection, grill, and combination modes heat food differently, so the right fix depends on the mode, food placement, and accessories. Start with your appliance’s manual: instructions for racks, baskets, and settings are model-specific.
Why heating varies by mode
Microwave-only cooking can leave cold spots because microwave energy does not heat every part of food uniformly. Air-fry and convection modes rely on moving hot air, so crowding or obstructed airflow can affect browning. A grill heats strongly from above, which can brown the top before the underside is done. Combination modes follow the appliance’s programmed sequence and may have their own power and accessory rules.
There is no single cause or universal setting for every combo oven. Diagnose the mode first, then check the quantity, shape, position, and accessories against the manual for your exact model.

Check power, quantity, and placement
Use a power level suited to the amount and type of food. Electrolux notes that a level that is too high for a small quantity can contribute to uneven cooking. Arrange food evenly in a microwave-safe dish and use the turntable as your manual directs. A turntable helps distribute exposure, but it does not guarantee that every spot will heat equally.

Stir or turn, then allow standing time
For foods that can be moved, stir, rotate, or turn them midway through cooking. USDA FSIS recommends arranging food evenly in a covered dish, adding liquid if needed, venting the cover, and stirring or turning midway. Let food stand for the period specified by the recipe, label, or appliance instructions; cooking continues during standing time. See USDA FSIS guidance on cooking with microwave ovens.
Remove only accessories your manual says to remove
Some models require metal shelves or trays to be removed during microwave-only operation. Electrolux gives that instruction for its appliances, but accessory rules differ by model. Do not assume a rack that is permitted for convection, grill, or air-fry is also safe in microwave-only mode.

Fix uneven browning in air-fry or convection mode
Keep airflow open
Air-fry and convection modes depend on hot air moving through the cavity. Avoid piling food on top of itself, and do not cover a turntable or convection rack with foil if your manual warns against it. Maytag says foil covering those surfaces interferes with hot-air circulation in its convection system.

Use the specified basket or rack position
Follow the appliance’s directions for its supplied accessory. For example, Maytag’s air-fry instructions for a particular appliance call for opening the basket’s foldable feet, centering it on the turntable, and ensuring it does not touch the cavity wall. That positioning is not a universal rule for other models. Check the manual before substituting cookware or a third-party basket.

Preheat and turn food when instructed
Some convection recipes or models call for preheating. Panasonic also identifies incorrect temperature, time, function, cookware, food position, and thickness as possible contributors to uneven results. Use the specified oven-safe cookware; its support guidance describes low-rimmed trays, glass, or ceramic for convection, subject to the appliance instructions. Turn or flip food when the manual or recipe calls for it, particularly if the pieces are thick or dense.
Fix uneven results in grill or combination mode
For grill mode, account for heat from above
A grill element can brown the top before the bottom cooks through. Haier recommends turning food and using hot-air convection when the feature is available and appropriate for the recipe. Panasonic’s grill guidance describes top-element heating and recommends the provided rack or a shallow heatproof dish for its appliances. Follow your model’s cooking chart and accessory instructions rather than transferring another brand’s setup.

For combination mode, follow the model’s sequence and limits
Combination settings may limit microwave power or restrict which accessories can be used. Electrolux, for example, says microwave power in Combi mode cannot exceed 600 W on its appliances; that limit should not be applied to other brands or models. Use the programmed mode and settings specified in your manual, and do not leave in an accessory unless the manual permits it for that mode.

Surface browning is not proof that food has heated through. USDA FSIS warns that microwave ovens can leave cold spots where harmful bacteria may survive. After cooking and the prescribed standing time, check food with a food thermometer in several places. For poultry, the safe minimum internal temperature is 165 °F; check the thickest areas rather than relying on a browned surface. See USDA FSIS microwave cooking advice.

Unless a thermometer is labeled safe for microwave cooking, take the food out before checking it. USDA FSIS advises against leaving an unapproved thermometer in food during microwaving; follow the thermometer’s own instructions. More detail is available in USDA FSIS guidance on food thermometers.
When to stop troubleshooting and seek service
- Confirm the selected mode, amount of food, time, and temperature or power level against your appliance instructions.
- Check that food is in the specified position, the turntable rotates if required, and the approved rack or basket is installed only in a permitted mode.
- Clean visible residue only as the manual directs. IFB lists a dirty waveguide cover as one possible cause on its supported models; this is not a diagnosis for every combo oven.
- Stop using the appliance if it sparks unexpectedly, appears damaged, or continues to heat abnormally. Maytag warns that accessory racks can cause arcing with microwave function on supported models.
Do not open the appliance or attempt to repair its high-voltage microwave components. If mode-specific checks do not resolve the problem, contact the manufacturer or an authorized service provider for guidance on your model.
