Serve besan ki sabji with plain rice or roti: both are recommended by a recipe for the dish itself. If you mean gatte ki sabji, the related dumpling curry, you can also pair it with steamed or jeera rice, paratha, jowar roti or bajra roti.
First, distinguish besan ki sabji from gatte ki sabji
Besan means gram flour. In a recipe specifically titled Besan Ki Sabji, the dish is served with plain rice or roti. Gatte ki sabji is a more specific related dish: seasoned besan dough is shaped into dumplings, boiled, sliced and added to curry. The cited Rajasthani version uses a spiced, tangy yogurt-based gravy, and its recipe notes household and regional variations.

Plain rice is the most direct rice pairing for besan ki sabji in the recipe cited above. Its mild flavor makes a straightforward base for spooning the gravy over.

More options for gatte ki sabji
For gatte ki sabji, Dassana Amit’s recipe lists roti, paratha, jowar roti, bajra roti, steamed rice and jeera rice. Treat these as documented choices for the dumpling-based preparation, not as a list established for every besan curry. Jeera rice is a more flavorful alternative to plain or steamed rice; the source does not rank it as more authentic or preferable.
Should you add a side dish?
A simple yogurt side is one adaptable option, but the available evidence does not establish it as a standard accompaniment for every besan ki sabji. Uttarakhand Open University’s Regional Cuisines of India-I course material says besan masala roti may be served with a spicy side or simple yogurt. It also gives an example of a Rajasthani sabzi meal with kadhi, phulkas and steamed rice. These examples can help you build a meal, but they do not establish a standard list of raita, pickle or salad pairings for besan ki sabji.
