The “protein popsicle” was a block of ice containing collected snow fleas, prepared so researchers could obtain enough of their antifreeze protein to study. It was a laboratory sample—not a frozen treat or a consumer product. A 2005 report on the snow flea Hypogastrura harveyi described an unusual protein with glycine-rich ice-binding sites, unlike the threonine-rich sites then reported in beetle and moth antifreeze proteins.
What was the “protein popsicle”?
Peter Davies, a Queen’s University researcher quoted in the 2005 account, used the phrase for ice in which researchers had collected snow fleas. The frozen sample was a way to gather enough tiny insects to extract their antifreeze protein for analysis. The nickname refers to how the sample looked, not to a food made with the protein. How does the snow-flea protein affect ice?
Antifreeze proteins bind to ice as it forms and inhibit the growth of ice crystals. They do not warm an insect or act like household chemical antifreeze; their reported effect is on ice formation and crystal growth.
The 2005 report said the snow-flea protein could prevent ice formation up to 5.8°C below freezing. That figure belongs to the report’s description of the studied protein; it should not be read as a current product specification or as a new independent measurement.

What made the snow-flea protein unusual?
The report described glycine-rich ice-binding sites in the snow-flea protein. By contrast, the beetle and moth antifreeze proteins discussed there had threonine-rich sites. This was a contrast among the proteins known at the time, not evidence that every insect antifreeze protein has one structure.
Glycine is associated with flexibility in protein structure, so the repeating glycine pattern prompted questions about how the protein could bind ice. Christina Cheng, an antifreeze-protein expert at the University of Illinois, noted that repeated glycine units tend to make turns in a polypeptide and said it would be interesting to see the structure and learn how it binds ice. The report said researchers planned to determine that structure.

Why did researchers care about antifreeze proteins?
The finding added to evidence that organisms from very different groups can use proteins that interact with ice. The contemporary report discussed antifreeze proteins in fish, plants, insects, and bacteria. Davies suggested that such groups may have evolved these solutions independently; that was the researchers’ interpretation in the report, not a settled account of evolutionary history.

Davies summed up the diversity this way: “We’re seeing quite an amazing diversity of proteins all doing the same job.” The snow-flea result mattered because it pointed to a different molecular approach to that shared task.

Could antifreeze proteins be used in food, crops, or medicine?
The 2005 report raised frozen foods, crop protection, and cooling organs before transplantation without freezing them as possible applications. These were prospective uses, not established outcomes. Patent disclosures also describe proposed frozen-food applications, but a patent describes claims or proposed work; it does not show that a product is marketed, approved, or made with the snow-flea protein.
For example, a Unilever patent disclosure discusses using antifreeze proteins in ice confections to inhibit recrystallization and help keep colours and flavours from moving between layers. It specifies 0.0005% to 0.005% by weight for its disclosed application. That is a patent-specific range, not a general food-use recommendation. A separate patent describes laboratory work involving a fusion protein in a popsicle mixture; neither disclosure establishes commercial use of snow-flea antifreeze protein. EP1158866B1 patent record
